Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

04

05

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

Savor Moriyama Family Izakaya Flavors at Home! Tips for Takeout & Delivery

Here are practical tips for enjoying Moriyama's concentrated izakaya charm to your heart's content at home. At a Moriyama Family Izakaya like ours, we offer many exquisite dishes made with fresh ingredients, and their deliciousness remains unchanged whether you choose takeout or delivery. We'll share hints to help you enjoy each menu item to the fullest.

Bring Fresh Moriyama Station Seafood to Your Table

Around Moriyama Station, there are many restaurants offering fresh seafood, benefiting from Lake Biwa's bounty and arrivals from all over Japan. The freshness is particularly crucial for seafood dishes. Even with takeout and delivery, efforts are made to maintain this freshness.

  • Sashimi Platter: A colorful and fresh sashimi platter beautifully enhances your dining table. The appeal lies in being able to enjoy a variety of seafood that is difficult to source at home. Soy sauce and wasabi are often included, so you can serve it directly.
  • Kaisendon (Seafood Bowl): If you choose a type where the rice and ingredients are separated, you can assemble it right before eating for maximum deliciousness. Ikura-don (salmon roe bowl) and seafood chirashi sushi are also popular.
  • Grilled Fish / Simmered Fish: Grilled fish, which can cause odors when cooked at home, and time-consuming simmered fish can be taken out as is from the restaurant. Simply reheating them brings back their fluffy texture and rich flavor.

Fresh Moriyama Station seafood dishes are perfect for family gatherings or evenings when you want a little luxury. They pair wonderfully with sake or white wine, and are sure to spark lively conversation.

Recreate the Fragrance of Moriyama Robatayaki! Izakaya Atmosphere at Home

Robatayaki is famous for its enticing aroma of charcoal-grilled food cooked right before your eyes. You can enjoy this immersive flavor experience even at home. Moriyama Robatayaki takeout delivers that aromatic essence, perfectly preserved.

  • Various Skewers: A variety of skewers, including chicken, pork, and vegetables, offers the fun of each family member choosing their favorite. When reheating, using a fish grill or toaster will make the surface crispy and delicious.
  • Yaki Onigiri (Grilled Rice Balls): Savory grilled rice balls with special soy sauce are very popular with children. They are also ideal for a light snack or as a finishing dish.
  • Charcoal-Grilled Vegetables: Seasonal vegetables simply grilled over charcoal bring out their inherent sweetness. This is also recommended for health-conscious families.

Simply arranging robatayaki dishes nicely on plates can create an atmosphere as if you're sitting at an izakaya counter. Enjoy professional grilling at home effortlessly with takeout from Moriyama Family Izakaya.

Savor Umeda-cho Izakaya Specialties with Moriyama Sake

Umeda-cho Izakaya offers a wide selection of exquisite dishes, carefully chosen to pair with delicious local sake. There are plenty of options for sake-loving parents, as well as those who don't drink alcohol.

  • Assorted Fried Dishes: Fried chicken, tempura, and other fried foods loved by both children and adults can be reheated to restore their crispy texture. Enjoy variations by squeezing lemon or adding special dipping sauces.
  • Stewed Dishes: Slowly simmered dishes like motsuni (offal stew) and kakuni (braised pork belly) are well-flavored and delicious even when cold. Reheating them further enhances their deep flavor.
  • Dashimaki Tamago (Rolled Omelet): Fluffy and gently flavored dashimaki tamago is a popular menu item across all ages. It's also perfect as a side dish for bento boxes.

If you're enjoying Moriyama Sake at home, be sure to pair it with the specially crafted dishes from Moriyama Family Izakaya. Arrange them on your favorite tableware and enrich your family's time together.

At the end of the day, enjoy easy and nutritious meals with your family, fostering enjoyable conversation.

Various types are available depending on the restaurant, such as sushi platters using Moriyama Station seafood or combinations of popular Moriyama Robatayaki dishes.

  3. Easy to Share Options: Choosing individually portioned dishes or foods in easy-to-share sizes ensures smooth dining even with a large group.

Special dishes prepared by restaurant professionals will create a memorable day for your family.

  2. Appetizers that Pair with Drinks: Combine a wide variety of appetizers that go well with Moriyama Sake, as well as beer and wine, such as edamame, takowasa (octopus with wasabi), or chanja (spicy fermented pollock guts), to transform your home into an authentic izakaya.
  3. Utilize Disposable Containers: If you want to reduce washing up, choosing restaurants that provide meals in disposable containers is convenient.

A Moriyama drinking party at home allows you to enjoy yourself to the fullest without worrying about time or place. Be sure to have a good time with delicious food.

Secrets to Maximizing Your Takeout & Delivery Experience

If you're going to order delicious food from Moriyama Family Izakaya for takeout or delivery, you'll want to enjoy the restaurant's flavors to the fullest at home, right? With a little ingenuity, your satisfaction can greatly increase.

Professional Flavor Transformed by Reheating Method

The optimal reheating method varies depending on the dish. With a little effort, the restaurant's deliciousness can be revived.

  • Fried Foods (fried chicken, tempura, etc.): Reheat for a few minutes in a toaster oven or fish grill to make the coating crispy, enjoying a texture close to freshly fried. Be careful, as a microwave can make the coating soggy.
  • Grilled Foods (skewers, robatayaki, etc.): A toaster oven or fish grill is also recommended here. Watch carefully to prevent burning. Lightly pan-frying is also a good option.
  • Simmered & Soupy Dishes: Transferring them to a pot and reheating is best. Gently warming them over low heat allows the flavors to meld evenly and enhances the aroma.
  • Rice Dishes (bowls, bento boxes): While a microwave is convenient for reheating, ensure the rice doesn't become hard by covering it with plastic wrap to retain moisture.

When reheating, remove the food from its original container and transfer it to a heat-resistant dish or plate for better results. This small extra step significantly enhances the flavor of the dish.

Smooth Pickup with Advance Reservation

Especially on weekends and during dinner hours, restaurants can get crowded, and it might take time from ordering to pickup. In such cases, making an advance reservation allows you to receive your food smoothly.

  • Reduced Waiting Time: If you specify a pickup time when reserving, you can go to the store at that time and receive your order without waiting. For delivery, ordering with ample time is also recommended.
  • Avoid Sold-Out Items: Popular menu items can sometimes sell out. By reserving in advance, you can ensure you get the dishes you want.
  • Consult About Allergies & Requests: If you inform the restaurant about allergies or specific ingredient requests at the time of reservation, they can better prepare in advance. If anyone in your family has allergies, be sure to mention it.

Reservations can be easily made by phone or online. Use them strategically to get delicious food stress-free.

Enjoy with Original Arrangements!

Another great pleasure of dining at home is to further customize and enjoy takeout and delivery dishes to your liking.

  • Add Color: Simply garnishing with condiments you have at home (e.g., green onions, perilla leaves, ginger), cherry tomatoes, or lettuce can make the dish visually much more appealing.
  • Vary Flavors with Seasonings: Experiment with adding seasonings you have at home, such as lemon juice, mayonnaise, or shichimi chili powder, to change the taste. For example, add homemade tartar sauce to fried chicken.
  • Combine with Other Dishes: By combining takeout à la carte dishes with rice, miso soup, salad, and other items prepared at home, you can create a balanced meal.
  • Reinvent Leftovers for the Next Day: For instance, if you have leftover simmered fish, flake it and mix it with rice to make mixed rice, enjoying it as a treat the next day.

By adding your family's personal touch to the professional flavors of the restaurant, you can create an even more special dish.
