Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Moriyama.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Moriyama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Moriyama.

05

Private Rooms & Banquets

Fully private tatami rooms for 2–20 guests, banquet courses with free-flow drinks, and full-venue bookings for 30–40. Steps from Moriyama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

Creating a Joyful Dining Table at Our Family-Friendly Izakaya in Moriyama

Hello everyone. Amidst the busyness of daily life, the time spent slowly enjoying a delicious meal with the whole family is a precious treasure. For families with young children, choosing a restaurant can be quite a challenge. You have to consider those around you, whether there are menu items that children can safely eat, and most importantly, whether the food is truly satisfying for adults as well. Finding an ideal restaurant that meets all these conditions can be surprisingly difficult.

For those thinking, I wonder if there's an izakaya in Moriyama where the whole family can smile... or I want to enjoy delicious seafood and robatayaki even with my children..., we would like to introduce our deep commitment to ingredients and warm hospitality, which we offer with confidence. We believe we can provide an experience that will surely exceed the expectations you hold for a family-friendly izakaya in Moriyama.

The Seasonal Bounty We Cherish at Our Moriyama Family Izakaya

What we value most is serving you ingredients at their peak deliciousness, right in season. This not only dramatically improves the flavor of our dishes but also allows you to enjoy the natural vitality and nutrients of the food. With the desire for children to have safe and wholesome meals and for adults to savor the profound taste of the ingredients, we make no compromises when selecting seasonal produce.

  • Carefully Selected Ingredients for Each Season: Fresh mountain vegetables and vibrant spring greens in spring; sun-ripened summer vegetables and fatty seasonal fish in summer; a rich harvest from the mountains and flavorful autumn fish in fall; and crisp winter vegetables and seafood delicacies like crab and yellowtail in winter. We expertly source these special, season-exclusive ingredients from all over Japan.
  • Connection with Producers: We don't just see ingredients as stock; we view them as works of art lovingly cultivated by producers. That's why we value face-to-face relationships, engaging in direct dialogue to learn the stories behind the ingredients and gain insights into their peak condition. This enables us to provide our guests with trustworthy ingredients unique to our Moriyama family izakaya.
  • Cooking Methods that Highlight the Ingredients: Even the finest seasonal ingredients can lose their charm with the wrong cooking method. We are constantly pursuing techniques that maximize the unique characteristics of each ingredient. For example, our robatayaki grill uses far-infrared heat to cook food slowly, concentrating its natural umami. For our seafood dishes, we focus on simple seasonings to let the fresh flavors shine through while preserving their quality.

From Sea to Mountain: Our Commitment to Fresh Seafood and Local Ingredients in Moriyama

Given Moriyama's location, we are blessed not only with the bounty of Lake Biwa but also with fresh seafood from across the country and produce from Shiga's lush mountains. To meet the expectations of freshness associated with Moriyama seafood, we have established a system for direct sourcing from the market every morning. Our commitment to freshness is unwavering, all to hear our customers say, That was delicious!

Direct from the Market! The Freshest Bounty of the Sea

  1. Sourced Every Morning: Early in the morning, our specialized staff visit the market to select seafood that has just been landed that day. Our long-standing relationships with trusted brokers allow us to pick out the highest quality items, even during the auction.
  2. Selecting Seasonal Seafood: We focus on sourcing seafood when its flavor and fat content are at their peak, such as firm yellowtail and crab in winter, or squid and horse mackerel in summer. This bounty of the sea is then prepared in the optimal way for each type, whether as sashimi, robatayaki, or simmered dishes.
  3. The Bounty of Lake Biwa: We also actively incorporate seasonal fish from Lake Biwa (like ayu and moroko), allowing you to enjoy a taste unique to Moriyama. Encountering rare ingredients that leverage our local advantage—something not easily found in big cities—is another charm of our Moriyama family izakaya.

The Bounty of the Mountains, Nurtured by Shiga's Rich Land

  • Vegetables from Contract Farmers: We source fresh, safe, and seasonal vegetables from contract farmers within Shiga Prefecture. Grown with a focus on soil quality, these vegetables are characterized by their robust flavor and deep sweetness. Simply grilling them on the robata brings out their exceptional taste.
  • Omi Meats: When you think of Shiga, you think of Omi beef. Of course, we include high-quality Omi beef on our menu. We also offer locally raised pork and chicken, prepared using methods best suited for each cut, allowing you to fully enjoy the rich bounty of the mountains.

Bringing Smiles to Both Children and Adults: Our Thoughtfully Crafted Family-Friendly Menu

As an Umeda-cho izakaya, we hope to be a place long-loved by our local community. To achieve this, we believe a menu that the entire family can enjoy with peace of mind is essential. In addition to authentic dishes for adults, we offer a rich variety of creative items that will delight children.

Peace of Mind for Children! A Considerate Menu

  • Allergy Accommodations: To ensure that children and adults with food allergies can dine with peace of mind, we will accommodate individual needs as much as possible. Please feel free to consult with us when you make a reservation or upon being seated. We will explain the ingredients in detail and suggest alternatives.
  • Kids' Menu: We also offer a safe and delicious kids' menu designed to be easy for young children to eat. We pay attention to nutritional balance with dishes like grilled fresh fish and gently seasoned meals full of local vegetables.
  • Sharable Platters: To help families enjoy a variety of dishes together, we offer a great selection of large platters perfect for sharing. Items like our assorted robatayaki or seafood platters encourage conversation and make for an even more enjoyable meal.

Satisfaction for Adults, Too! Authentic Robatayaki and Moriyama Sake

Of course, to ensure adults can also indulge, we offer authentic robatayaki and a wide selection of Moriyama sake, thoughtfully chosen to complement our cuisine. Slowly grilled over Binchotan charcoal, our robatayaki maximizes the umami of the ingredients and entices with its fragrant aroma. Even our fresh Moriyama seafood reveals a new dimension of deliciousness when grilled on the robata.

  • The Joy of Robatayaki: Watching the ingredients cook right before your eyes is part of the fun of robatayaki. The sight of our skilled chefs carefully grilling each skewer is like watching a live performance. You can enjoy the peak of freshness—hot off the grill—with all your senses: aroma, sound, and taste.
  • Selected Moriyama Sake: Shiga Prefecture is home to many breweries, each producing its own unique sake. We have carefully selected a wide range of Moriyama sake, from dry to sweet and from Junmai Ginjo to Honjozo, considering their pairing with our robatayaki and seafood dishes. We are happy to recommend the perfect bottle to match your preferences or your meal.
