Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Moriyama.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Moriyama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Moriyama.

05

Private Rooms & Banquets

Fully private tatami rooms for 2–20 guests, banquet courses with free-flow drinks, and full-venue bookings for 30–40. Steps from Moriyama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

Delve into the Depth of Moriyama Sake: A Curated Selection and Chef's Recommendations

We take particular pride in our lineup of Moriyama sake, a local treasure. Shiga Prefecture is blessed with rich nature and pure water, hosting numerous unique sake breweries. We have curated a wide selection, from seasonal limited editions and nationally renowned brands to hidden gems loved by locals. We offer a variety of types to satisfy everyone, from sake novices to knowledgeable connoisseurs.

If you're unsure which sake to choose, please feel free to ask our staff. We will recommend the perfect bottle to match your preferences or complement your meal. For instance, a crisp, dry sake enhances the sweetness of Omi beef's fat, while a rich, savory sake deepens the complexity of the dish. Experiencing the wonderful marriage of sake and cuisine is one of the greatest appeals of our restaurant.

  • Famed Sake from Local Shiga: We have carefully selected unique sake from all over Shiga Prefecture, starting with Moriyama's local brews. We also offer rare, seasonal limited editions.

The Marriage of Omi Beef and Moriyama Sake: The Appeal of Our Chef's Recommended Courses

The star of our cuisine is undoubtedly Omi beef. As one of Japan's top three wagyu brands, Omi beef is characterized by its fine texture and melt-in-your-mouth sweet fat. To bring out its maximum appeal, our chef has crafted various course meals. Enjoying Omi beef in its different forms—such as charcoal-grilled, shabu-shabu, or sukiyaki—paired with Moriyama sake creates a truly blissful experience.

Our chef's recommended courses are designed to let you enjoy Omi beef prepared in various ways, with the overall balance from appetizer to dessert carefully considered. For example, one course might begin with Omi beef nigiri, followed by a dish featuring seasonal seafood, then a main of Omi beef steak, and conclude with seasoned rice using seasonal ingredients, offering a gourmet experience that appeals to all five senses. Pairing each dish with the optimal sake infinitely expands the depth of flavor. We offer multiple courses to suit your budget and purpose, so please see the details.

Course Menus Incorporating the Best of Each Season

In addition to Omi beef, we actively incorporate the most delicious seasonal ingredients. By featuring the blessings of each season—such as fresh vegetables grown in Shiga's rich nature and seafood from Lake Biwa—in our courses, we offer new discoveries and delights with every visit. Please fully enjoy the harmony created by seasonal ingredients, Omi beef, and Moriyama sake.

  1. Omi Beef Extravaganza Course: A course where you can savor the deep umami of rare cuts of Omi beef prepared in various ways. Pairing with sake creates an even more luxurious experience.
  2. Seasonal Special Selection Course: This course features Omi beef as the main dish while incorporating plenty of seasonal ingredients. Enjoy visually beautiful dishes that evoke the four seasons of Japan.
