Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

02

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Moriyama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Moriyama.

05

Private Rooms & Banquets

Fully private tatami rooms for 2–20 guests, banquet courses with free-flow drinks, and full-venue bookings for 30–40. Steps from Moriyama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

Moriyama City in Shiga Prefecture is blessed with rich nature, showcasing beautiful expressions with each changing season. In this land, feeling the breath of the shifting seasons while savoring sake to your heart's content is a true luxury for adults. We hope to offer our customers such a special moment. Admiring cherry blossoms in spring, feeling the cool breeze in summer, with the joy of harvest in autumn, and gazing at snowy landscapes in winter. The perfect encounter with Moriyama sake awaits you, tailored to each season.

At our establishment, we value not just drinking sake, but enjoying the culture behind it and the seasonal changes in flavor with all five senses. We invite you to experience the depth of sake, which reveals a different character with every serving. From first-time sake drinkers to connoisseurs, we strive to satisfy all our guests with a carefully selected lineup and seasonal recommendations.

  • In the season of fresh greenery, start refreshingly with a fresh, light new sake or ginjo sake.
  • In the height of summer, feel the cool with a glass of crisp, chilled nama-zake or sparkling sake.
  • In the fruitful autumn, savor the deepening season with hiyaoroshi, known for its mellow umami.
  • With the arrival of winter, warm up to your heart's content with warm junmai or aged sake.

The Harmony of Seasonal Sake and Cuisine: An Encounter with Omi Beef

The charm of sake lies not only in its deliciousness on its own but in the infinite world that opens up through its pairing with food. In particular, pairing with seasonal ingredients enhances each other's flavors and creates unforgettable taste memories. At our restaurant, we carefully select seasonal ingredients that can only be enjoyed at that time of year and offer dishes that bring out the maximum personality of each sake.

The Delicate Harmony of Seasonal Seafood and Sake

Seafood nurtured by Japan's rich seas and rivers changes with the seasons, captivating us. For seafood with a delicate taste, it is crucial to choose a sake that does not overpower its flavor.

  • Spring Seafood For example, for fish like sea bream and halfbeak, which are light yet have an elegant umami, a light, fruity ginjo or new sake is a perfect match. Its crispness, which seems to melt in your mouth, highlights the delicate flavor of the ingredients.
  • Summer Seafood For seasonal sweetfish and pike conger, a crisp nama-zake or chilled sake is recommended. The refreshing sake provides a pairing that makes you forget the summer heat.
  • Autumn Seafood For autumn delicacies like fatty saury and returning bonito, a hiyaoroshi or junmai sake with a rich aroma and mellow umami is a good match. The deep sake further enhances the rich umami of the fish.
  • Winter Seafood For richly flavored seafood like seasonal crab, pufferfish, and yellowtail, a full-bodied aged sake or a junmai sake that is also delicious warm is recommended. A powerful sake further draws out the depth of winter flavors.

Choosing Sake to Best Enjoy Omi Beef

Shiga's prized brand of beef, Omi beef, is characterized by its fine texture and sweet, melt-in-your-mouth fat. To help you enjoy this exquisite ingredient in its best form, we understand the characteristics of Omi beef and propose the optimal Moriyama sake.

To complement the deep umami and high-quality sweet fat of Omi beef, a full-bodied junmai or a crisp, dry sake is ideal. For example, a mellow junmai ginjo brings out the delicate umami of Omi beef's red meat, creating a blissful experience where both melt together in your mouth. For fattier cuts, choosing a dry junmai that cleanses the palate allows you to enjoy the deliciousness of Omi beef without growing tired of it.

Our chefs select the perfect sake to match various preparation methods for Omi beef, offering our guests new discoveries and excitement. Please experience the exquisite marriage of Omi beef and Moriyama sake.
