Our story
Located in the heart of Moriyama, Shiga, Uomaru is a seafood izakaya where fresh fish and carefully selected sake meet the craft of robatayaki grilling.
Sashimi finished by skilled hands from fish delivered straight from the port, bonito from Kochi, and Omi beef from Shiga — grilled dynamically right before you over straw and charcoal.
A calm Japanese space with lively counter seats and relaxing private rooms — for dates, family dinners, and company banquets alike.
Commitment
In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.
Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.
We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.
Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.
Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.
A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata
How to enjoy straw-grilling and robata
The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.
Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.
Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.
Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

Column
When planning a banquet in Moriyama with important people, many of you likely want to create not just a delicious meal, but a special, memorable experience. While a standard banquet course is wonderful, taking a step further to incorporate wine pairing can infinitely expand its appeal. In this column, we will delve into the secrets of wine pairing from a practical perspective, providing essential knowledge for choosing a banquet course in Moriyama. Please enjoy the blissful moments created by the interweaving of dishes that utilize Moriyama's rich ingredients and the wines that accompany them.
Choosing a banquet course in Moriyama begins with finding the perfect establishment from a wide range of options that suits the attendees' preferences and the purpose of the event. However, have you ever felt that the food is delicious, but something is missing, or the drinks I chose don't quite match the food? The solution may lie in adopting the new perspective of wine pairing.
Wine pairing is a technique that elevates the taste of both the food and the wine many times over by combining them in a way that they bring out the best in each other, rather than just simply drinking wine. By being mindful of this pairing when choosing a banquet course in Moriyama, all participants can have an inspiring culinary experience unlike any they've had before.
New Culinary Discoveries: Through the synergistic effect with wine, even familiar dishes can reveal completely different expressions.
A Catalyst for Lively Conversation: Conversations like, This wine and this dish are a perfect match! will emerge, further enlivening the banquet's atmosphere.
A Memorable Experience: The combination of delicious food and wine appeals to all five senses, remaining in the heart as an unforgettable memory.
Some of you may feel that your banquets have become monotonous, choosing similar courses year after year. Moriyama is home to many restaurants that offer delicious dishes made with an abundance of fresh seafood and local vegetables. By pairing these dishes with wines carefully selected by a sommelier or the restaurant staff, your usual banquet course can be transformed, as if it were a custom-made course meal.
Our Moriyama banquet courses make the most of seasonal ingredients that change with the seasons, and we can also suggest wines to match each dish. This allows our customers to experience new discoveries and excitement every time, expanding the enjoyment of choosing the optimal course to suit the purpose of the banquet and the attendees.
Some people may feel that wine pairing sounds complicated or I can't do it because I don't know anything about wine. But please rest assured. Wine pairing is by no means a high-level skill that requires specialized knowledge. What's important is the simple mindset of enjoying food and wine together.
Our staff will recommend wines in an easy-to-understand manner, tailored to your preferences and the day's dishes. For example, for dishes featuring an abundance of fresh seafood from Moriyama, we can guide you through specific options, such as a light white wine that doesn't overwhelm the delicate flavors of the seafood, or a sparkling wine that enhances its umami. Even without any knowledge of wine, you are sure to find a combination that you intuitively feel is delicious!
At our restaurant, we offer carefully selected Moriyama banquet courses so that you can thoroughly enjoy your event. To bring out their full charm, we proactively suggest wine pairings that have been thoughtfully considered for their compatibility with the cuisine. We pursue not just drinking, but deepening the joy of savoring food and wine together.
Our Moriyama banquet courses feature an abundance of seasonal ingredients nurtured by Moriyama's rich nature. In spring, we have cherry sea bream and local wild vegetables; in summer, the blessings of Lake Biwa and fresh summer vegetables; in autumn, flavorful mushrooms and the tastes of the harvest; and in winter, warming hot pot dishes and seafood. We express the transition of each season on the plate, devising ways to bring out the maximum natural flavor of the ingredients.
Our sommelier and chefs will carefully select and propose the optimal wine for each of these seasonal dishes. For example, a crisp, dry white wine with a rich minerality for fatty seasonal seafood. For meat dishes raised on Moriyama's fertile land, a powerful red wine or a lighter red. For delicate vegetable dishes, a rosé wine with pleasant herbal aromas. We select wines that match the flavor and texture of the cuisine.
Spring Banquet: Enjoy the delicate flavors of spring vegetables and white fish with a light white wine.
Summer Banquet: Savor refreshing summer vegetables and cold dishes with rosé or sparkling wine.
Autumn Banquet: Taste deep-flavored dishes like mushrooms and root vegetables with a medium-bodied red wine.
Winter Banquet: Warm up with meat dishes and stews accompanied by a full-bodied red wine.

When planning a gathering in Moriyama, you might find yourself struggling to combine food and wine. However, by knowing a few simple tips, anyone can choose wine successfully and with greater satisfaction. Here are some specific hints for selecting wine at a Moriyama izakaya.
A banquet course typically progresses from appetizers to the main dish and dessert. Choosing wine to match this flow will further enhance the deliciousness of the food.
Light Wines for Appetizers and Lighter Dishes: To start the banquet, a light and fruity white wine or sparkling wine is recommended to whet the appetite. It pairs well with carpaccio made with fresh seafood from Moriyama or a fresh vegetable salad.
Wines Matched to the Flavor of the Main Dish: While the basic rule is white wine for fish and red wine for meat, the choice can vary depending on the seasoning and cooking method. For example, a full-bodied white wine pairs well with a fish dish in a cream sauce, while a light red or rosé wine can be a good match for a soy-based meat dish.
Sweet Wine for Dessert: For dessert, a sweet wine that can stand up to its sweetness is ideal. Enjoy the lingering taste after your meal with a dessert made of chocolate or fruit.
There's no need to stick to one type of wine throughout the entire course. The real pleasure of pairing is choosing the optimal wine for each dish.
If you're unsure about which wine to choose, don't hesitate to ask our staff. Our staff members are knowledgeable about food and wine and can suggest the best wine for you, taking into account your preferences, budget, and the purpose of your banquet.
Share Your Preferences: Even vague preferences like I like sweet wine, I prefer dry, or I want something fruity are fine. Sharing this helps the staff narrow down the options.
Ask About Food Pairings: The most reliable way is to ask directly, Which wine goes well with this dish? The staff knows the day's course menu inside and out and can give you precise advice.
State Your Budget: By telling them your budget, they can suggest the best wine within that range. Expensive wines are not always the best. There are many affordable wines that pair exceptionally well with food.
To enjoy your gathering at a Moriyama izakaya even more, we recommend actively communicating with our staff. You might make a new discovery.
Some may find the idea of choosing a whole bottle of wine daunting. In such cases, make good use of wine by the glass. We offer a variety of wines by the glass, allowing you to try different ones with each course.
For example, you can experience a variety of wines as the meal progresses: a crisp white wine with the appetizer, a slightly richer white wine with the main fish dish, and a light red wine with the meat dish. This allows you to enjoy a much more diverse range of wine pairings than choosing a single bottle and also provides a great opportunity to discover your new favorite wine.
For those who want to enjoy wine more freely and joyfully at a Moriyama gathering, we highly recommend trying pairings with wine by the glass.
Banquets in Moriyama can be for various occasions, depending on the purpose and attendees. By being mindful of wine pairings tailored to each scene—such as entertaining clients, a casual gathering with friends, or a family celebration—the event will become even more memorable. Here are some tips on how to use wine pairing for specific situations.
For business entertainment and dinners, not only the taste of the food but also a smart approach is required. Utilizing wine pairing can demonstrate consideration and good taste to your guest.
Gather Information in Advance: Find out your guest's preferences, allergies, and whether they drink alcohol beforehand. Discussing the wine pairing in advance will ensure a smooth event on the day.
Choose Understated yet High-Quality Wine: Rather than an overly flashy wine, it's safer to choose a quality wine that complements the food. Refer to the sommelier or staff's recommendations based on the Moriyama banquet course dishes.
Utilize Wine by the Glass: If your guest is not a wine expert or if you want to enjoy various dishes in small portions, proposing a pairing with wine by the glass will be well-received. Being able to try several types of wine also sparks conversation.
We have private rooms available, providing a calm space for entertaining with our fitting Moriyama banquet courses. You can rest assured that we will also provide the best wine pairing suggestions tailored to your needs.
At a Moriyama gathering with close friends, it's best to enjoy wine pairing in a relaxed atmosphere. Don't think too rigidly; try out various combinations.
Have Fun with a Theme: Deciding on a theme, such as Italian wines only tonight or let's compare different white wines, can make the event even more exciting. Pairing dishes featuring Moriyama's fresh seafood with wines from coastal regions could also be interesting.
Share and Enjoy: Ordering several bottles of wine and sharing them among everyone while discussing their compatibility with each dish is a great idea. The cozy atmosphere of our Umeda-cho izakaya will surely liven up the conversation.
Try the Staff's Recommendations: A gathering with friends is the perfect opportunity to be adventurous and try unusual wines recommended by the staff. A new discovery could become a fun memory of your get-together.
