Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Moriyama.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Moriyama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Moriyama.

05

Private Rooms & Banquets

Fully private tatami rooms for 2–20 guests, banquet courses with free-flow drinks, and full-venue bookings for 30–40. Steps from Moriyama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

The Perfect Marriage of Wine and Cuisine with a Private Booking in Moriyama

A Special Encounter of Japanese Cuisine and Wine, Made Possible by a Private Booking in Moriyama

Are you looking for a place in Moriyama City, Shiga Prefecture, to chat with loved ones or enjoy a fun time with friends? Many of our guests choose a private booking in Moriyama as a space to relax to their heart's content, away from the hustle and bustle of daily life. While dining in a private space is exceptional on its own, what if you could add the new color of wine pairing to the experience? Japanese cuisine and wine may seem like an unlikely combination at first glance, but they actually hold infinite possibilities. At our restaurant, we go beyond being just another Moriyama izakaya and focus on the marriage of food and wine to provide our customers with an unforgettable gastronomic experience. This time, we will delve into the charms of Japanese cuisine and wine, realized in a private Moriyama setting, and share information that will make your next visit even more enriching.

For those planning a gathering or meal near Moriyama Station that's a little different from the usual, our private booking in Moriyama is the ideal choice. In addition to Japanese sake and shochu, we also have a wide selection of carefully chosen wines that pair well with Japanese food. In particular, the combination of our dishes, which utilize fresh seasonal ingredients like seafood from near Moriyama Station, and our wines has brought surprise and delight to many of our customers.

Deepening the Joy of Food in a Private Space

  • The benefit of a private booking in Moriyama: focus on conversation and food without worrying about your surroundings.
  • Meticulous service and cuisine you can't experience at a typical izakaya.
  • The joy of discovering new charms in your food through wine pairing.

Overturning the Image of a Moriyama Izakaya: A New Discovery of Japanese Food and Wine

When you hear Moriyama izakaya, you might imagine a place to enjoy beer and Japanese sake. However, if you use our private booking in Moriyama, that perception is sure to change. Modern Japanese cuisine has diversified and fused with food cultures from around the world. Just as French or Italian food is paired with wine, there are wines that pair wonderfully with delicate and profound Japanese dishes. In particular, our cuisine, which makes ample use of fresh local ingredients and seafood from near Moriyama Station, is created with wine pairing in mind.

For example, a crisp, dry white wine refreshes the palate and enhances the natural umami of light-flavored white fish sashimi. Meanwhile, a light-bodied red wine or rosé surprisingly matches well with richly flavored dishes like teriyaki or miso-simmered items, elevating the tastes of both. As an Umedacho izakaya, we are constantly honing our skills to offer our customers new culinary experiences. Please come and confirm this surprise for yourself in our private Moriyama space.

The Changes Brought by Pairing Japanese Food and Wine

  • Synergy of Flavors: The food and wine enhance each other's taste, creating a richer flavor profile.
  • Deepening the Dining Experience: A familiar dish feels like a completely new creation when combined with wine.
  • A Conversation Starter: Sharing impressions of the pairing makes for a more lively table.

Enjoy a Rich Encounter Between Seafood and Wine with a Private Booking in Moriyama

Seafood from near Moriyama Station is one of our prides. Our dishes, which feature the bounty of Lake Biwa and fresh seafood sourced from all over Japan, have been well-received by many customers. While these seafood dishes are, of course, an excellent match for Japanese sake, their charm can be further enhanced through wine pairing. The experience of slowly savoring each dish and wine in the calm atmosphere of a private booking in Moriyama is truly exceptional.

For example, pair fatty tuna sashimi with a mineral-rich Burgundy white wine or a light rosé. For white fish tempura, a sparkling wine like Champagne leaves a refreshing finish that cuts through the oiliness. For dishes using shellfish or crustaceans, a fragrant white wine like Sauvignon Blanc is a great match. We always have staff on hand who can propose the optimal wine to suit your preferences, so please feel free to consult us. Trying a different kind of pairing with seafood and wine at your Moriyama gathering could be a delightful new adventure.

Specific Examples of Seafood and Wine Pairings

  1. Assorted Sashimi: A fresh Riesling or a crisp Chardonnay.
  2. Grilled Fish: For the aromatic skin, an oak-aged Chardonnay or a light red wine like Pinot Noir.
  3. Seafood Ajillo: Besides white wine, a dry sherry or sparkling wine is also recommended.
