Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Moriyama.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Moriyama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Moriyama.

05

Private Rooms & Banquets

Fully private tatami rooms for 2–20 guests, banquet courses with free-flow drinks, and full-venue bookings for 30–40. Steps from Moriyama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

Producers

Deepen Conversations with Moriyama Sake: Pairings with Select Brands and Cuisine

Shiga Prefecture, blessed with abundant nature, is home to many high-quality sake breweries. We offer a curated selection of sake, from famous local Shiga brews to rare brands from across the country, and we specialize in proposing the perfect mariage (pairing) to complement our Moriyama Station seafood and robatayaki.

Discover the Charm of Sake: From Local Shiga Brews to Famous National Brands

Sake is an art form woven from the local climate, water, rice, and the skill of the master brewer (toji). We have a diverse selection of brands so that our guests can fully enjoy the depth of sake.

  • Local Shiga Sake: We offer a wide variety of local sake brewed with Shiga's rich water and rice, ranging from crisp and dry to rich and mellow. They pair perfectly with local ingredients.

The Mariage of Food and Sake: A Blissful Combination

Great food deserves great sake. We place great importance on the mariage between our signature dishes, like Moriyama Station seafood and robatayaki, and our carefully selected sake.

  • Junmai Ginjo with Sashimi: A sake with a brilliant aroma, like a Junmai Ginjo, is recommended to enhance the delicate umami of seafood. Enjoy the harmony as they melt together in your mouth.
  • Dry Junmai with Robatayaki: A crisp, dry Junmai sake pairs well with fragrant charcoal-grilled seafood and meat. It cleanses the palate and invites the next bite.
  • Seasonal Sake with Seasonal Dishes: Pair dishes made with seasonal ingredients with the limited-edition sake of that season. The food and sake enhance each other, creating a profound flavor experience.

We hope that through sake, conversations will deepen, making your family meal or business dinner in Moriyama an even more enjoyable occasion. Our staff is dedicated to assisting you. If you are unsure which sake to choose, please don't hesitate to consult us.
