Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

Experience the Delight of Wine Pairing in Moriyama's Private Venues

The Joy of Wine Pairing: Realized with a Private Venue in Moriyama – Secrets to Creating Memorable Feasts

Special moments with loved ones. For such occasions, a private venue where you can relax without concern for your surroundings is often the preferred choice. Moriyama offers private spaces suitable for various scenes, from anniversary celebrations and company gatherings to casual get-togethers with friends. We particularly want to share the appeal and utilization of wine pairing, which further enhances the charm of your dishes.

In Moriyama, experience the ultimate marriage of seasonal ingredients and exquisite cuisine during a private gathering. This time, we'll provide practical information that will make you think, I want to go there, or I want to use that. Please read on to the end.

Why is Wine Pairing Essential for Special Private Events in Moriyama?

When planning a private banquet in Moriyama, do you often find yourself pondering over the menu, the guests, and the beverage selection? Especially when choosing drinks, many may wonder, Is just beer and sake enough? or If we offer wine, what types would be best?

Often, beverage choices tend to be safe or uninspired. However, even with magnificent dishes prepared, if the drinks aren't a good match, the overall experience can be significantly diminished. For instance, an overly heavy red wine might overpower the delicate flavors of seafood, or a light white wine could be overshadowed by a rich meat dish. In such cases, the true deliciousness of the cuisine cannot be fully appreciated.

We want everyone planning a private event in Moriyama to experience the ultimate moment where food and drink elevate each other. Beyond simply serving delicious food and beverages, if they can harmonize in a special way, stimulating the five senses and creating lasting memories, the banquet will become even more unforgettable. How can one select and serve wines that perfectly complement the dishes? We will answer this question with specific solutions and practical steps.

Basics of Wine Pairing to Enhance Your Dishes in a Private Moriyama Venue

The term wine pairing might sound daunting or as if it requires specialized knowledge. However, anyone can enjoy it by simply grasping the basics. Please use this as a reference when planning a private banquet in Moriyama.

Matching the Weight of Food and Wine

  • The most fundamental concept of wine pairing is to match the weight of the dish's flavor with the weight of the wine. For example, light and fresh white wines pair excellently with carpaccio made from fresh seafood caught near Moriyama Station or lightly pan-fried white fish. Conversely, for slowly simmered meat dishes or rich, saucy plates, choosing a full-bodied red wine creates a magnificent harmony, respecting each other's characteristics.

  • Weight refers to the intensity of flavor and the volume or mouthfeel experienced when consumed. Delicate dishes call for delicate wines, and robust dishes for robust wines. Simply being aware of this balance significantly increases the success rate of pairing.

  • At our izakaya in Moriyama, we propose the optimal wine based on your preferences and the course content. If you are unsure, please do not hesitate to consult our staff.

Complementing Food Flavors with Wine Aromas

  • Building a complementary relationship between food flavors and wine aromas (scents) is also a highlight of pairing. For instance, for dishes featuring herbs, choose wines with herbal notes. For dishes with citrus-based sauces, selecting a wine with similar citrus nuances will deepen the flavor through a synergistic effect.

  • If the dish extensively uses fresh vegetables from Moriyama, a Sauvignon Blanc with green notes would be an excellent choice. For slightly spicy dishes, a Syrah (Grenache) with peppery or spicy aromas will enhance the dish's character.

  • Sometimes, intentionally pairing wines with contrasting flavors can lead to surprising new discoveries. For example, combining a slightly salty dish with a sweet wine can make the saltiness tighten the sweetness, resulting in a deeper flavor. Our izakaya in Umeda-cho can also suggest such unexpected combinations.

Enjoying the Contrast or Harmony of Texture

  • Considering the texture (mouthfeel) of both food and wine also broadens the enjoyment of pairing. For example, pairing creamy dishes with a well-carbonated sparkling wine refreshes the palate and invites the next bite without feeling heavy.

  • Conversely, for crispy fritters or aromatic grilled dishes, pairing them with a wine of equally robust structure allows you to enjoy the harmony of textures. For example, a crisp dry white wine is an excellent match for fresh fish fritters caught near Moriyama Station.

  • To make your gathering in Moriyama even more special, our staff will offer suggestions that consider the mouthfeel of the wine for each dish. Please engage all your senses and experience that harmony.

Harmony of Seasonal Ingredients and Wine: Maximizing Moriyama's Bounty

Moriyama's rich bounty changes its expression with each season. Dishes made with seasonal ingredients offer a special deliciousness that can only be savored during that time. And for seasonal ingredients, there are optimal wines that perfectly accompany them. If you are planning a private banquet in Moriyama, be sure to incorporate wine pairing that considers the season.

Spring: Light Pairings for the Season of Budding Growth

  • Spring offers an abundance of ingredients with delicate aromas and flavors, such as wild vegetables, bamboo shoots, and young ayu and sayori fish landed at Moriyama Station. Light and fresh white wines or rosé wines are ideal for enhancing the natural flavors of these ingredients.

  • For instance, Koshu wine with pleasant citrus notes or a mineral-rich Riesling beautifully complement bamboo shoot tempura without overpowering the ingredient's delicate flavor. Adorn your private banquet in Moriyama with refreshing pairings that evoke the breath of spring.

Summer: Refreshing Wine Encounters that Invite Coolness

  • In hot summer, light dishes such as grilled ayu with salt,鱧 (pike conger) dishes, and salads made with fresh vegetables from Moriyama are appetizing. For such summer dishes, chilled sparkling wine or a white wine with refreshing acidity like Sauvignon Blanc are perfect.

  • Especially for seafood dishes from Moriyama Station, a mineral-rich Chablis or crisp dry sake (Moriyama sake is also available) are excellent choices. Smooth and fresh wines provide a cool and refreshing time that makes you forget the summer heat. Enjoy unique summer pairings at our izakaya in Umeda-cho.

Autumn: Deep Pairings for the Season of Harvest

  • Autumn brings an abundance of flavorful and aromatic ingredients such as matsutake mushrooms, chestnuts, various mushrooms, and returning bonito and pacific saury rich in fat. These ingredients pair well with white wines with a moderate aged feel or medium-bodied red wines.

  • For example, a barrel-aged Chardonnay or a delicate red wine like Pinot Noir complements grilled pacific saury with salt, enhancing the fish's umami while creating a rich harmony in the mouth. Why not experience the luxurious pairings unique to the autumn harvest at your private banquet in Moriyama?

Winter: Rich Wines to Accompany Warming Dishes

  • In cold winter, rich dishes that warm both body and soul, such as hot pot dishes, game meat, and stews generously using root vegetables, become highly desirable. For such dishes, full-bodied red wines or robust white wines are optimal.

  • For instance, powerful and tannic red wines like Cabernet Sauvignon or Merlot maximize the deliciousness of Omi beef sukiyaki or steak, a pride of Shiga Prefecture. Enjoy a blissful time woven by warm dishes and rich wines at our izakaya in Moriyama. We will propose the best combinations to make your gathering in Moriyama a special memory.

Satisfying Diverse Guests: Flexible Approaches to Pairing

A private banquet in Moriyama will likely gather diverse guests with varying ages and preferences. When planning wine pairing, it is crucial to consider flexible approaches that can satisfy everyone. At our izakaya in Moriyama, we propose ways to enjoy tailored to each customer.

A Wide-Ranging Wine List, from Classics to Adventures

  • First, we offer several types of classic house wines (red and white) that everyone can safely enjoy. These pair well with many dishes and can be casually enjoyed even by those less familiar with wine.

  • Furthermore, to delight wine enthusiasts, we also feature a selection of unique wines carefully chosen from around the world. We offer a wide range of choices, from dry white wines suitable for fresh seafood dishes near Moriyama Station to full-bodied red wines perfect for meat dishes like Omi beef.

  • Upon request, we can also prepare selections focused on specific regions or varietals. With the meticulous service unique to our izakaya in Umeda-cho, we cater to your diverse needs.

Non-Alcoholic Pairing: Everyone Takes Center Stage

  • We want even those who don't drink alcohol to enjoy their meal as much as with wine pairing. With this in mind, we also focus on non-alcoholic beverages. We offer specially blended non-alcoholic drinks that match the flavors and textures of the dishes, rather than just standard soft drinks.

  • For example, we can suggest pairings such as spicy ginger ale for meat dishes, or homemade drinks infused with herbs and citrus for fish dishes, considering compatibility with the cuisine just like wine. Even at a gathering in Moriyama, everyone can experience the joy of pairing, regardless of whether they drink alcohol.

New Discoveries with Tasting Pairings

  • For those who want to try several wines to see what pairs well with the dishes, we can prepare an introductory pairing set that allows you to sample several wines in mini glasses (prior consultation required). This allows each participant to discover their favorite glass while checking their preferences and compatibility with the dishes.

  • This could be an entry point to a new world, especially for those unfamiliar with wine. We hope that your private banquet in Moriyama becomes a wonderful opportunity for wine discovery.

Special Wine Experiences Only Possible with a Private Venue in Moriyama

Custom-made wine experiences are only possible in a private space. For special occasions like anniversaries, birthdays, or important business dinners, you'll want to pay close attention not only to the cuisine but also to the selection and presentation of wine. At our izakaya in Moriyama, we help bring your vision to life.

Wine Concierge Service by Dedicated Staff

  • For private banquets, a dedicated staff member will serve as your wine concierge, assisting you with wine selection. During a preliminary consultation, we will thoroughly inquire about the purpose of the event, guests' preferences, and the menu course to propose an optimal wine list.

  • For instance, our knowledgeable staff can answer specific questions such as, Do you have a slightly rare sweet wine that pairs well with this dessert? or What white wine would be good for dishes using seafood from Moriyama Station? We also adjust the wine temperature and decanting according to the timing of the dishes, serving them in their best condition.

  • This liberates the organizer from the pressure of wine selection, allowing them to enjoy the banquet with peace of mind. We promise the meticulous hospitality unique to our izakaya in Umeda-cho.

Anniversary Wine to Include Surprises

  • For celebratory occasions such as birthdays or wedding anniversaries, we can also arrange special wines as a surprise. For example, we can prepare a memorable bottle such as a vintage wine from a significant year or a wine with a custom-engraved label.

  • Various surprise arrangements are possible, such as offering a special sparkling wine that is usually hard to obtain for a toast, or secretly preparing the guest of honor's favorite brand. Such detailed arrangements are possible precisely because it is a private venue in Moriyama.

  • Adding a message to your loved one along with the wine will multiply the emotional impact. We will help ensure your gathering in Moriyama becomes an unforgettable day.

Themed Wine Tastings

  • For wine enthusiasts, how about enjoying a themed wine tasting in a private space? We can propose unique plans tailored to your requests, such as A comparative tasting of French Bordeaux wines or A comparative tasting of sake (Moriyama sake is also available) and wine that pair well with seafood from Moriyama Station.

  • Our staff will explain the history, characteristics, and pairing tips of each wine, transforming it from a mere drink into a deeply educational experience. Enjoy a wine experience that satisfies your intellectual curiosity, unique to our izakaya in Moriyama.

Planning Wine Pairing to Realize Your Ideal Private Event in Moriyama

Successful execution of a special private banquet in Moriyama hinges on proper preparation. Here, we introduce concrete steps to achieve a banquet that incorporates wine pairing. Organizers, please refer to these steps to create an unforgettable experience.

Step 1: Clarify the Purpose and Envision the Participants

  • Define the purpose: Clearly establish the purpose of the private event, whether it's a birthday celebration, business dinner, company gathering, or a casual get-together with friends. The purpose will influence the menu course and wine selection.

  • Envision the participants: Understanding the age range, gender, wine preferences (e.g., mostly beginners or enthusiasts), and the ratio of drinkers to non-drinkers among participants will help us make more appropriate suggestions.

  • Inform us when booking your private venue in Moriyama: By conveying this information to us when making your reservation, we can ensure a smooth consultation from the initial stage. Our izakaya in Moriyama will carefully listen to your wishes.

Step 2: Confirm the Menu Course and Discuss Wine Direction

  • Confirm the dishes to be served: Review the seasonal menu course we offer in advance to understand what ingredients are used and their flavor profiles. Especially when local specialties like seafood from Moriyama Station or Omi beef are used, pairing can leverage their unique characteristics.

  • Communicate wine preferences: Please feel free to tell us the type of wine participants prefer (red, white, sparkling; light, heavy; dry, sweet, etc.) and if there are any types they dislike.

  • Consult with Moriyama's expert staff: Our staff will propose wine directions tailored to each dish. Specific advice, such as Moriyama sake is good for this fish dish, but we also recommend this white wine, is possible. Let's plan your ideal pairing together at our izakaya in Umeda-cho.

Step 3: Receive Recommended Pairing Suggestions Based on Budget and Number of Guests

  • Clearly define your budget: Please inform us of your total budget for beverages, including wine. We will suggest the optimal wine combinations, number of bottles, and options for glass wines according to your budget.

  • Consider the number of bottles based on guests: We will estimate the appropriate number of wine bottles based on the number of participants. By suggesting a quantity that is neither too much nor too little, you can enjoy yourselves without waste.

  • Original Private Moriyama Plan: Upon request, we can also consider special plans, including wine selections aligned with a specific theme or featuring rare brands. We are flexible in ensuring your gathering in Moriyama becomes a memorable one.

Step 4: On the Day, Enjoy the Harmony of Wine and Food with All Your Senses

  • Listen to the staff's explanation: The staff will provide a brief explanation about the wines served. By learning about their origin, grape varietal, and pairing points with the dishes, you can gain a deeper understanding of the connection between wine and food.

  • Enjoy the aroma, taste, and finish: Take a bite of food, then a sip of wine. Savor how their respective flavors and aromas transform and enhance each other. This is the ultimate way to enjoy wine pairing.

  • Savor the private space in Moriyama: Without worrying about your surroundings, enjoy conversation with your loved ones and indulge in the exquisite marriage of food and wine to your heart's content. Your special time in Moriyama will surely become an unforgettable memory.
