Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

05

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

The Charms of Moriyama Station Seafood, Robatayaki, and Omi Beef

While Moriyama Station Seafood is our signature dish, our offerings don't stop there. Our Moriyama Robatayaki, which utilizes Shiga's rich ingredients, and the renowned brand beef Omi Beef are also highly praised by our customers. These dishes will further enhance your special time in a private room.

Fresh Bounty from the Sea: Moriyama Station Seafood

Our prized Moriyama Station Seafood uses fresh catches delivered directly from the market every morning. Our skilled chefs bring out the maximum flavor of the ingredients, offering them in various preparations such as sashimi, sushi, grilled dishes, and simmered dishes. Seasonal seafood offers a special taste only available during that period. Please thoroughly enjoy the bounty of the sea throughout the seasons in your private room.

  • Assorted Sashimi Platter: A vibrant arrangement of exceptionally fresh seasonal seafood, a delight for both the eyes and the palate.
  • Seafood Robatayaki: Seafood slowly grilled over charcoal, condensing its fragrant aroma and umami.
  • Special Kaisen Don (Seafood Rice Bowl): Luxuriously topped with seafood, popular even during lunchtime.

Enjoy Moriyama Robatayaki over Charcoal

The allure of our Moriyama Robatayaki lies in the live experience of slowly grilling fresh seafood, local vegetables, and Omi beef right before your eyes over charcoal. The far-infrared effect locks in the ingredients' umami, resulting in fragrant and juicy finishes. You can enjoy the true essence of Robatayaki not only at the counter seats but also in our spacious private rooms.

The savory aroma of the grilled dishes stimulates the appetite, allowing you to savor them with all five senses. The time spent conversing with family and friends around hot Robatayaki will surely become an unforgettable memory. Especially in winter, warm Robatayaki warms you to the core.

Shiga's Renowned Brand: Omi Beef

Omi Beef, considered one of Japan's three major Wagyu brands, is characterized by its fine marbling and melt-in-your-mouth texture. At our restaurant, we offer carefully selected Omi Beef prepared in various ways, such as steak, seared sushi, and shabu-shabu.

Being able to enjoy high-quality meat dishes alongside seafood is a major appeal of our restaurant. For those near Moriyama Station who want to have both seafood and meat, we also recommend course meals that combine Omi Beef with Moriyama Station Seafood. Please take your time and fully enjoy Shiga's rich bounty in a private room.

Enjoying Moriyama Sake and Food Pairings

Delicious food is incomplete without delicious sake. At our restaurant, we offer a rich selection of carefully chosen sakes from all over Japan, including Moriyama Sake that pairs well with our dishes. The pairings with fresh Moriyama Station Seafood, Moriyama Robatayaki, and Omi Beef are particularly exceptional.

The Exquisite Harmony of Seafood and Sake

For delicately flavored seafood dishes, we recommend crisp, dry sake or Junmai Ginjo sake where the umami of rice is clearly felt. These will enhance the seafood's flavor while refreshingly cleansing the palate.

  • Assorted Sashimi: A refreshing Ginjo sake enhances the delicate flavors of the seafood.
  • Grilled Fish: A slightly aged Junmai sake brings out the richness of the fish's fat and its savory aroma.
  • Nimono (Simmered Dishes): A savory Junmai sake harmonizes with the sweet and salty seasoning of Nimono, creating a deep flavor.

Our sake sommelier will recommend the perfect sake to match your preferences, so please feel free to ask.

The Surprising Pairing of Meat Dishes and Sake

While red wine is commonly paired with meat dishes like Omi Beef, sake actually complements them exceptionally well. Aromatic and rich Junmai Daiginjo or robust Junmai Ginjo sake will further enhance the meat's umami, offering new culinary discoveries.

For example, a Junmai Ginjo sake with a strong rice umami and a balanced acidity and richness is recommended for Omi Beef steak. It will cleanse the palate of the meat's richness while allowing the flavors to spread even more richly in your mouth.
