Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Moriyama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Moriyama.

05

Private Rooms & Banquets

Fully private tatami rooms for 2–20 guests, banquet courses with free-flow drinks, and full-venue bookings for 30–40. Steps from Moriyama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

We believe our unwavering commitment to freshness, flavor, safety, and security is what brings smiles to our customers' faces and earns us the compliment, 'I want to come back.' In this article, we will unveil the secrets and charms behind why our Moriyama party courses are chosen by so many.

Savor the Ocean's Bounty and Shiga's Seasonal Best with Our Moriyama Party Courses

The greatest appeal of our acclaimed Moriyama party courses lies in the carefully selected ingredients that adorn our dishes. Driven by the singular desire to 'serve truly delicious food in its absolute best condition,' we are deeply committed to every single ingredient. In particular, fresh seafood and the rich bounty of our local Shiga prefecture are essential elements of our cuisine.

Fresh Fish Delivered Daily: A Taste of the Port's Vitality

Every morning, we offer fresh seafood sourced directly from fishing ports across the country. Despite our convenient location near Moriyama Station, we spare no effort to maintain a level of freshness as if you were in a port town. The fish, carefully caught by dedicated fishermen, arrives at our restaurant the same day. Our skilled chefs assess the unique characteristics of each fish to deliver it to your table in peak condition. You can enjoy our offerings to your heart's content, prepared in ways that maximize their flavor—from translucent sashimi platters and fragrant grilled fish to savory simmered dishes steeped in dashi broth.

The Blessings of Lake Biwa and Rich Local Seasonal Vegetables

Lake Biwa, the symbol of Shiga Prefecture, is a treasure trove of valuable ingredients for us. In addition to seasonal seafood from the lake, fresh seasonal vegetables grown in the fertile lands around Moriyama are indispensable to our cuisine. The vegetables we source directly from our partner farmers are picked that very morning. They are crisp, succulent, and packed with their natural sweetness and aroma. By skillfully incorporating these local blessings, we deliver the rich, changing flavors of the seasons to you through our Moriyama party courses. These dishes, which capture the essence of Shiga's climate, are sure to bring color and excitement to your table.

Diverse Courses at Our Moriyama Izakaya to Suit Any Occasion

What one seeks from a banquet varies greatly depending on the occasion. At our restaurant, we offer a wide variety of Moriyama party courses to meet the diverse needs of our customers. From intimate gatherings with a small group to lively parties with a large crowd, we promise to deliver the best experience for any event.

A Wide Range of Courses to Choose From Based on Your Needs

From casual get-togethers to important business dinners, family meals, and anniversary celebrations, our courses cater to a variety of purposes. For instance, when you visit us as a family-friendly izakaya in Moriyama, we can suggest courses with kid-friendly menus or plans that allow you to relax in a private room. For corporate drinking parties in Moriyama, our all-you-can-drink courses offering excellent value are very popular. Our luxurious courses, featuring an abundance of select ingredients, are perfect for entertaining clients or celebrating special anniversaries. Each course is well-balanced, from appetizers to dessert, with dishes that express the changing seasons, ensuring you'll discover something new with every visit.

The Skill and Sincerity of Our Chefs in Every Dish

Our cuisine is not just about high-quality ingredients. Our experienced chefs work with sincerity and without compromise, from meticulous preparation to cooking and plating, to bring out the maximum potential of each ingredient. While cherishing the traditions of Japanese cuisine, our creative dishes incorporate a modern sensibility, making them as beautiful to the eye as they are delicious. For example, even with a simple grilled dish, we pay close attention to the charcoal heat and how it cooks the ingredients to ensure it is served at its most flavorful. Each plate, infused with the chef's expert skill and gratitude toward our customers, adds a touch of splendor to your banquet.

Our Commitment to Ingredients: Nurturing Trust and Smiles as an Umeda-cho Izakaya

Located in Umeda-cho, Moriyama, our goal as an Umeda-cho izakaya is to be a place loved by the local community. We consider our commitment to safe and reliable ingredients our mission, ensuring our customers can enjoy their meals with a smile. Amid growing awareness of food safety, we strive to remain a trusted establishment through transparent sourcing and a deep knowledge of our ingredients.

Strong Bonds with Trusted Producers

When sourcing our ingredients, we place the utmost importance on communication with our producers. By building face-to-face relationships, we can clearly understand how our ingredients were raised and where they were harvested. For example, we source vegetables directly from local partner farmers and work closely with trusted fishermen and brokers for our seafood. This direct sourcing allows us to provide fresher ingredients by cutting out intermediaries, and we believe it also enables us to convey the passion of the producers to our customers through our dishes. Selecting ingredients you can enjoy with peace of mind is our top priority for protecting our customers' health and happiness.

The Chef's Expert Eye for Selecting the Best of the Season

The deliciousness of an ingredient is greatly influenced by its 'shun,' or peak season. Our chefs visit the market, using their own eyes and hands to hone their 'mekiki'—their discerning eye—to identify the most delicious seasonal ingredients. For instance, they select the best materials with a well-trained sense developed over years of experience, judging a fish by the firmness of its flesh and its color, or a vegetable by the freshness of its leaves and the thickness of its roots. It is this thorough selection process that allows our Moriyama party courses to fully showcase the supreme flavors that can only be enjoyed during that specific season. The vibrant taste of seasonal ingredients will satisfy your body and soul, adding a rich touch to your banquet.

Transforming Your Moriyama Get-together into a Special Experience with Heartfelt Hospitality

Of course, delicious food and quality ingredients are essential, but we believe that a comfortable space and warm hospitality are indispensable for creating an unforgettable banquet. At our Moriyama izakaya, we provide meticulous service down to the smallest detail to ensure our guests can truly relax and have an enjoyable time.
