Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Moriyama.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Moriyama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Moriyama.

05

Private Rooms & Banquets

Fully private tatami rooms for 2–20 guests, banquet courses with free-flow drinks, and full-venue bookings for 30–40. Steps from Moriyama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

Savoring the Bounties of the Seasons at a Moriyama Izakaya

Seasonal Bounties and Special Moments at Our Moriyama Izakaya

Here at our Umeda-cho izakaya, located in the heart of Moriyama City, Shiga, we strive every day to offer our guests heartwarming moments and memorable flavors. Our Seasonal Menu is where our Moriyama izakaya chefs pour their greatest efforts. By making the most of the ingredients nurtured by Japan's rich, ever-changing nature, we prepare special dishes that can only be savored at their peak time. We want to be a place where our guests can always make new discoveries and be moved, no matter when they visit. With this sentiment, we prepare to welcome you all again today.

We hope you'll visit us with the anticipation of wondering, What does the Moriyama izakaya have today? We pursue the inherent deliciousness of seasonal ingredients, offering dishes that fuse traditional techniques with a modern sensibility. We believe this is not merely serving food, but a cultural experience in itself—a chance to feel Japan's four seasons and savor their bounty with all five senses.

Tired of the Same Old Izakaya Menu?

Have you ever felt that izakaya menus are all pretty similar everywhere or if I'm going to eat out, I want to enjoy more seasonal dishes? While classic menu items are certainly important, we strongly desire to meet the needs of customers who feel that's not enough. Especially at a Moriyama gathering, we believe that unique, seasonal dishes that spark conversation are the perfect spice to liven up the evening.

However, it's not uncommon for many restaurants to advertise seasonal specials that don't quite live up to expectations. We aim to bridge this gap between expectation and reality for our customers and provide an experience that surpasses it. Our restaurant doesn't just use seasonal ingredients; we promise to understand the best cooking methods to make those ingredients shine and to serve them to you in their absolute best condition. We invite you to experience the true essence of a Moriyama izakaya right here.

Specially Selected by Our Moriyama Izakaya! A Special Menu to Savor the Tastes of the Seasons

At our Moriyama izakaya, we proudly present our Seasonal Menu, which makes the most of the rich bounties nurtured by Japan's four seasons. Seasonal ingredients store special flavors and nutrients that can only be tasted during that specific time, and we are constantly honing our skills to serve them to you at their peak.

Feel the Breath of Spring with Wild Vegetables and Seafood

In spring, we prepare dishes that combine the pleasant bitterness of freshly sprouted wild mountain vegetables with fresh seafood from the Seto Inland Sea and the Sea of Japan. For example, you can enjoy the unique aromas and textures of spring with tempura of fukinoto (butterbur shoots) or kogomi (ostrich fern) with a sesame dressing. Sea bream and Spanish mackerel, which are in season at this time, are served as sashimi, grilled, or simmered to highlight their natural flavors. The visually vibrant spring dishes will add a touch of splendor to any Moriyama gathering.

Inviting Summer Coolness with Fresh Fish and Summer Vegetables

In the hot summer, one craves refreshing dishes that cool the body from the inside. We offer quintessential summer fish like hamo (pike conger) and ayu (sweetfish) in creative forms. Enjoy the delicate taste of blanched hamo with plum sauce, or salt-grilled ayu. Seasonal summer vegetables like eggplant and cucumber appear as chilled marinades or salads, prepared to stimulate the appetite even when it wanes in the heat. Savor the tastes of summer in the cool and refreshing space of our Umeda-cho izakaya.

Heralding the Autumn Harvest with Mountain Delicacies and Omi Beef

Autumn is truly the season for appetites. Our menu features an abundance of mountain treasures, including matsutake and other mushrooms, chestnuts, and ginkgo nuts. Shiga's prized brand, Omi Beef, pairs exceptionally well with the mushrooms of this season. The sukiyaki or grilled Omi Beef served with seasonal mushrooms creates a synergy of flavor and umami. Fish that are in season, such as autumn salmon and Pacific saury, are also offered salt-grilled or deep-fried, delivering a profound taste that speaks of the changing season. At our Moriyama robatayaki, these vegetables and Omi Beef take center stage.

Delivering Winter Warmth with Hot Pots and Seafood

In the cold of winter, a hot pot dish that warms both body and soul is the best comfort. We offer a variety of hot pots, including a luxurious seafood nabe with seasonal fish, as well as sukiyaki and shabu-shabu featuring Omi Beef. Winter yellowtail, in season during winter, can be fully enjoyed for its rich, fatty flavor in sashimi or teriyaki style. Warm dishes are sure to liven up any Moriyama gathering, deepening the bonds between friends. Please come and experience the heartwarming winter flavors unique to our Umeda-cho izakaya.

  • By presenting specific examples of seasonal ingredients and cooking methods, we can heighten customers' anticipation for their visit.
  • We connect our unique strengths and keywords like Omi Beef and Moriyama Robatayaki within a seasonal context.
  • Using the keyword Moriyama gathering, we help customers concretely visualize different occasions for visiting.

Seasonal and Local Sake to Enhance Your Moriyama Gathering

Delicious food is incomplete without a drink to match. At our Moriyama izakaya, we have carefully selected Japanese and local sake to complement our seasonal menu. We hope you will deeply savor Shiga's rich sake culture alongside the tastes of the season.

How We Select Sake Thoughtfully Paired with Our Dishes

We select our sake by placing importance on the balance between the character of each seasonal dish and the aroma and flavor of the sake. For example, for spring's wild vegetables, we suggest a fresh, light, and dry new brew. For delicate summer seafood, a ginjo sake that is delicious chilled. For the rich flavors of autumn, the mellow umami of a hiyaoroshi or aged sake. And for winter hot pots, we recommend a junmai or honjozo that can be enjoyed as warm kanzake.

Our staff will suggest the perfect bottle to match your preference and mood, so please don't hesitate to ask. We invite you to experience the depth of Moriyama sake at our izakaya.

The Charm of Seasonal Sake You Should Know

In the world of Japanese sake, there exists seasonal sake that can only be enjoyed at certain times of the year. In spring, you'll find shiboritate (freshly pressed) and shinshu (new sake); in summer, refreshing brews known as natsuzake; in autumn, aged sake called hiyaoroshi or akiagari; and in winter, unique varieties like nigorizake (cloudy sake) and kassei genshu (active undiluted sake). We actively stock these seasonal sakes to share their unique charm with our customers.

We hope you will cherish the once-in-a-lifetime encounters with special sake that you can only find at our Moriyama izakaya. As an Umeda-cho izakaya, we also work with local breweries to offer rare and limited-edition bottles.

  1. Try asking the staff for a sake pairing with a seasonal dish.
  2. Check for information on the limited-time seasonal sake available.
  3. Experience the unique character and differences of multiple sakes with a tasting flight.

The Luxury of Omi Beef and Seasonal Vegetables, Savored Robatayaki-Style

Another charm of our Moriyama izakaya is our robatayaki, where dishes are grilled right before your eyes. Savoring a meal while watching the flickering flames and taking in the fragrant aroma stimulates all five senses and creates an exceptional dining experience. We take particular pride in offering Shiga's celebrated Omi Beef and the most delicious seasonal vegetables of the moment, served robatayaki-style.

The Thrill and Aroma of Grilling Right Before Your Eyes

Robatayaki is more than just grilling ingredients. Our skilled chefs meticulously adjust the heat according to the type and condition of each ingredient to grill it to perfection. The far-infrared effect of the charcoal fire makes the surface of the food crispy and fragrant, while the inside remains plump and juicy. From the counter seats, you can experience the sizzle of the food, the flicker of the flames, and the rising aroma up close, turning the time you wait for your food into a special form of entertainment. Please fully enjoy the true pleasure of Moriyama robatayaki.

The Harmony of Omi Beef's Umami and Seasonal Vegetables' Sweetness

The Omi Beef we serve robatayaki-style uses carefully selected cuts, seasoned simply with salt and pepper to maximize its melt-in-your-mouth texture and rich umami. The seasonal vegetables, which change throughout the year, are slowly grilled over charcoal to concentrate their natural sweetness and aroma. For example, we serve maitake and shiitake mushrooms in the fall, and nagaimo yam and lotus root in the winter, alongside Omi Beef. The harmony created by the rich fat of the Omi Beef and the rustic sweetness of the seasonal vegetables is an unforgettable, moving experience. Please try this special combination that you can only taste at our Moriyama izakaya.

  • Experience the chef's skill and the lively atmosphere at the robatayaki counter.
  • Try comparing different cuts of Omi Beef, robatayaki-style.
  • Order charcoal-grilled seasonal vegetables and savor their natural sweetness.

Interior Design and Tableware that Reflect the Seasons

For example, we change the decor with the seasons: decorating with cherry blossom branches in spring, using cool bamboo and glassware in summer, incorporating the colors of autumn leaves and the warmth of pottery in fall, and creating a warm glow with subdued fabrics and lighting in winter. The tableware we use to serve our dishes is also carefully selected to match the season and the food. Beautiful dishes further enhance the flavor of the cuisine.
