Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

Are you looking for a special moment away from the everyday in Moriyama City, Shiga Prefecture? Our private-room izakaya in Moriyama brings you the profound charm of Omi Beef, one of Japan's top three wagyu brands, and the world of wine pairings that elevates it to its fullest potential.

Whether it's a meal with a loved one, a family gathering, a party with close friends, or a business dinner, we provide private spaces and heartfelt cuisine to ensure your satisfaction on any occasion. The harmony woven by the delicate umami of Omi Beef and carefully selected wines is sure to become an unforgettable gourmet experience.

What kind of wine goes well with Omi Beef? Can I enjoy authentic wine pairings at an izakaya? You may have such questions. In this article, we will delve into everything from the appeal of Omi Beef to the secrets of its pairing with wine, and tips for enjoying a blissful time at our restaurant.

Understanding the Depth of Omi Beef: The Key to Successful Wine Pairing

The Secret to Omi Beef's Unique Texture and Flavor

As one of Japan's top three wagyu brands, Omi Beef boasts a unique meat quality unmatched by any other, thanks to its long history and strict breeding standards. Its most distinctive feature is the fine marbling. The sashi beautifully interspersed within the red meat is like a work of art. When you take a bite, you'll experience a melt-in-your-mouth texture and a high-quality, non-greasy sweetness that lingers long after.

This rich flavor and delicate umami are the crucial keys to a successful wine pairing. The wine must be carefully chosen based on the quality of the meat's fat, the intensity of its umami, and the cooking method. The first step to maximizing the charm of Omi Beef is to understand its characteristics.

Basic Principles of Wine Pairing: Harmony and Contrast

There are several basic principles in wine pairing. The first is harmony. By matching the intensity of the dish and the wine, they complement each other, creating an even richer flavor. For a rich ingredient like Omi Beef, a full-bodied wine tends to create a good harmony.

Another principle is contrast. For example, the acidity and tannins in wine can refresh the palate from the rich fat of Omi Beef, making the next bite even more delicious. Understanding the balance between harmony and contrast is the secret to enjoying the profound world of wine pairing.

At our restaurant, our staff, who are well-versed in the charms of Omi Beef, will recommend the perfect wine to suit your preferences. If you're unsure which wine to choose, please don't hesitate to ask.

A Practical Guide to the Best Omi Beef and Wine Pairings in Moriyama

Classic Pairings with Red Wine

For steak or sukiyaki featuring marbled Omi Beef, the quintessential pairing is a rich red wine. The deep umami and sweet fat of the meat harmonize with the firm tannins and fruitiness of a red wine, creating a blissful marriage in your mouth.

  • Aged Bordeaux (Cabernet Sauvignon dominant): Elegant tannins and a deep aroma enhance the umami of Omi Beef.
  • California Cabernet Sauvignon: Its powerful fruitiness and full body stand up to the richness of the meat without being overshadowed.
  • Italian Barolo or Brunello di Montalcino: High acidity and rich tannins cut through the fat of the meat, bringing out its complex umami.

For Omi Beef steak grilled over charcoal, we especially recommend a red wine with toasty notes from barrel aging. The synergy of aromas is also an important element of pairing.

Surprising Pairings with White and Sparkling Wines

While the image of red wine with beef is strong, the delicate umami of Omi Beef also pairs wonderfully with certain white and sparkling wines. Lighter, crisp wines are especially recommended for dishes like Omi Beef tataki (seared), carpaccio, or light shabu-shabu.

  • Barrel-aged Chardonnay: The sweet fat of Omi Beef and the buttery richness and nutty aroma of Chardonnay create a complex harmony.
  • Dry Riesling: Its delicate acidity and minerality pair surprisingly well with leaner cuts of Omi Beef or dishes with Japanese-style seasonings.
  • Champagne (Brut): The fine bubbles refresh the palate and have the effect of cleansing the richness of Omi Beef. It's perfect for a toast but also try it as a drink to accompany your meal.

These wines embody the contrast pairing, refreshing your palate while allowing you to rediscover the delicate umami of Omi Beef.

Tips for Choosing Wine Based on Cooking Method

The flavor of Omi Beef changes significantly depending on how it's cooked. For example, a sweet and savory dish like sukiyaki pairs well with a fruit-forward red wine, while a steak simply seasoned with salt and pepper calls for a wine that enhances the meat's natural flavor. At our restaurant, we have recommended wines for each dish, and our staff can also make suggestions based on what you order.

Additionally, as a Moriyama Izakaya, we offer menus incorporating Japanese elements. For soy sauce-based seasonings or dishes with plenty of condiments, sake or shochu are also excellent choices. However, if you wish to explore the possibilities of wine pairing, please consult our staff. You might make a surprising discovery.
