The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.
