Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Moriyama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Moriyama.

05

Private Rooms & Banquets

Fully private tatami rooms for 2–20 guests, banquet courses with free-flow drinks, and full-venue bookings for 30–40. Steps from Moriyama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

As an izakaya also beloved in the Umeda-cho area, we sincerely hope to make your ideal moment a reality.

The Challenge: Why is Finding Great Seafood at Moriyama Station Difficult?

While Moriyama Station is surrounded by a wide variety of eateries, many customers find it challenging to locate a restaurant that serves truly delicious seafood. In typical izakayas, seafood is often just one of many menu items, and it's not uncommon to find a lack of specialized sourcing routes, deep knowledge of fish, or proper cooking techniques. Consequently, customer complaints like the freshness wasn't what I expected, the menu is always the same, I can't find seasonal fish, there are no private rooms for a quiet conversation, or the sake and food pairing isn't considered are unfortunately common.

These issues not only make for a disappointing dining experience but are also major factors that affect customer satisfaction. Customers specifically searching for Moriyama Station seafood surely have high expectations for the quality of the seafood itself. Poor-quality seafood can ruin the impression of the entire meal and spoil the atmosphere of a get-together or an important dinner.

At our restaurant, we sincerely address these earnest customer wishes and have prepared concrete solutions to resolve each one. We believe our mission is to eliminate your concerns and provide a Moriyama izakaya experience that leaves you truly satisfied.

Solution 1: An Unwavering Commitment to Freshness and Quality

We are convinced that the foundation of delicious seafood cuisine is, above all, freshness. To ensure that every dish that reaches your table is in its best possible condition, we utilize unique sourcing routes cultivated over many years, with our expert connoisseurs hand-selecting the finest seafood each morning. The fresh fish delivered directly from the market is a cut above the rest, distinguished by its firm texture, transparency, and the rich umami that fills your mouth.

The Secret to Our Sourcing: A Daily Encounter with Shun (the Peak Season)

  • The Pursuit of Morning-Catch Fish: Through close partnerships with trusted fishing ports and markets, we source fresh fish directly on the day it's landed. This minimizes distribution channels, allowing us to deliver seafood to your table while preserving its natural vitality and peak freshness. You can savor the thrilling taste of a fresh catch, as if you were dining by the sea.
  • The Brilliance of Expert Judgment: The optimal condition of seafood changes constantly depending on the type of fish, its origin, and the season. Our chefs, with their years of honed mekiki (discerning eye) skills, meticulously examine the condition of each fish. They strictly check every detail, from the fat content and firmness to the color and gloss, selecting only the finest specimens worthy of being served to our customers.
  • Carefully Selected Bounties from Across Japan: In addition to the rich blessings of Lake Biwa, we actively source the most delicious seasonal seafood from fishing ports all over Japan. For example, you can enjoy the firm-fleshed treasures of the Sea of Japan in winter and the richly flavored fish of the Seto Inland Sea in summer. This commitment to Moriyama Station Seafood ensures that new discoveries and delights await you with every visit.

This uncompromising dedication to sourcing is why we, as an Umeda-cho izakaya, continue to be chosen by customers around Moriyama Station as the place for delicious seafood. Please come and experience the aroma of the sea and the melt-in-your-mouth texture that greets you the moment you take a bite. We make no compromises in delivering the real thing to our customers.

Solution 2: A Fusion of Sea and Mountain Delicacies, Savored in Moriyama

Our restaurant not only specializes in fresh seafood but also actively incorporates attractive ingredients unique to the rich land of Moriyama. We offer our customers an exquisite harmony woven from the treasures of the sea and the mountains, including Omi Beef, a brand of beef that Shiga Prefecture is proud of, and fresh vegetables cultivated with care by local farmers. This ensures that even those who are not fond of seafood, or those who wish to enjoy both meat and fish, can have a fully satisfying dining experience.

The Allure of Omi Beef and Robatayaki

  • Exquisite Omi Beef, Grilled Robatayaki-Style: Omi Beef, one of Japan's top three wagyu brands, is characterized by its fine-grained meat and high-quality fat that melts in your mouth. We serve this Omi beef Moriyama Robatayaki style, a grilling method said to bring out the very best in the ingredients. By slowly grilling it over hot charcoal, excess fat drips away, concentrating the meat's natural umami and adding a fragrant aroma. Savoring Omi beef, the pinnacle of Moriyama's mountain treasures, alongside our seafood is a luxurious appeal unique to our Moriyama izakaya.
  • Robatayaki: Entertainment for the Five Senses: Our robatayaki is more than just a cooking method. The spectacle of flames and ingredients unfolding before your eyes is an entertainment that stimulates sight, smell, and hearing. The crackling sound of the charcoal and the savory aroma whet your appetite, and we serve the freshly grilled, hot dishes at their absolute best. You can also enjoy fresh seafood prepared robatayaki-style, allowing you to fully appreciate the ingredients' natural flavor and aroma.
  • Dishes that Showcase Local Blessings: In addition to Omi beef, we also offer seasonal fresh vegetables sourced directly from local farmers, grilled on the robata. Vegetables grown with the bounty of the earth reveal their sweetness and rich flavor when simply grilled. This cooking method, which maximizes the taste of the ingredients, pairs exceptionally well with seafood dishes, allowing you to enjoy a well-balanced meal. It's sure to lead to diverse culinary discoveries whether you're here for a Moriyama get-together or a Moriyama family izakaya meal.

By offering not only seafood but also exquisite products nurtured by Moriyama's rich land, we vastly expand our customers' dining options and richly color any Moriyama get-together or banquet. As an Umeda-cho izakaya, we aim to deliver the full charm of our local area to our customers.

Solution 3: A Comfortable Atmosphere and Perfect Sake Pairings

No matter how delicious the food, satisfaction is halved if the space where you enjoy it isn't comfortable. Furthermore, the right drink pairing is essential to further enhance the flavor of a dish. At our restaurant, we pay meticulous attention to creating a space where our customers can truly relax and have the best time, and we propose pairings with carefully selected Moriyama sake.

We believe that when delicious food, a comfortable space, and the perfect drinks all harmonize, an unforgettable dining experience is born. As an Umeda-cho izakaya, we strive to provide our customers with a luxurious time that can be enjoyed with all five senses.

Actionable Steps: A Checklist for Finding Your Ideal Seafood Izakaya at Moriyama Station

Based on what we've shared, here is a checklist of concrete steps and points to confirm when searching for a Moriyama izakaya or Moriyama Station seafood to find a wonderful restaurant like ours that is committed to its ingredients. Please use this list to help you achieve your best dining experience.

Points to Check When Choosing a Restaurant

  1. Confirm their commitment to freshness: Check if the menu has phrases like Today's Fresh Fish or Direct from the Market, or if the restaurant's website or social media actively posts information about their daily sourcing or direct deliveries from fishing ports. The more specific the information, the more confident they are in their freshness.
  2. Check for abundant seasonal ingredients: See if the menu is updated seasonally and if it actively incorporates seasonal seafood and local vegetables. The prospect of encountering new flavors with each visit is a major factor in choosing a restaurant.
  3. Check room types and availability: If you are planning a large Moriyama get-together or a Moriyama family izakaya visit with children, check their website or call directly to see if they have Moriyama zashiki private rooms or are a Moriyama fully private room izakaya. Reservations are crucial, especially on weekends and holidays.
  4. Check the sake selection and expertise: If you love sake, the richness of the lineup, selected with seafood pairings in mind, is important. Check if they have not only local sake but also famous brands from across the country, and if the staff can offer precise advice on pairings.
  5. Check banquet course and private booking options: If you are planning a business dinner or a large gathering, confirming the details of the Moriyama banquet courses (number of dishes, price, all-you-can-drink availability) and whether a Moriyama private booking is possible, along with capacity, will ensure smooth planning and execution.
  6. Check for other appealing dishes: Another major point is whether the restaurant offers other attractive dishes besides seafood, such as Moriyama's own Omi Beef or Moriyama Robatayaki, which brings out the ingredients' natural flavors. A diverse menu ensures that everyone in a Moriyama get-together with varied tastes will be satisfied.

Using these points, we hope you find the best Moriyama izakaya and your ideal Umeda-cho izakaya. Our restaurant strives daily to meet these expectations with our commitment to ingredients and spirit of hospitality. We sincerely look forward to your visit.
