Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Moriyama.

05

Private Rooms & Banquets

Fully private tatami rooms for 2–20 guests, banquet courses with free-flow drinks, and full-venue bookings for 30–40. Steps from Moriyama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

The Essence of Moriyama Robatayaki: A Feast for the Senses with Seasonal Delights

The Essence of Moriyama Robatayaki: A Space to Savor Seasonal Delights with All Five Senses

To all who wish to spend a special evening in Moriyama. What our restaurant offers is not merely a place to eat. It is a blissful experience where the finest bounties nurtured by Japan's rich four seasons are brought to their fullest potential through the simple yet profound cooking method of robatayaki, a delight for all five senses. We prepare our dishes and space with heartfelt sincerity every day, hoping our guests will feel the passion of the producers and the spirit of the artisans who bring out the best in every single ingredient.

When you hear Moriyama Robatayaki, what scene comes to mind? Fresh seafood and vegetables grilled over charcoal, surrounding a traditional hearth. A fragrant aroma fills the air, punctuated by the crackling sound of firewood. And, of course, warm conversation with dear friends and family. At our restaurant, we aim to breathe new life into this classic Japanese food culture and create unforgettable moments for each and every guest. We hope that through this article, you will get a glimpse of the charm of our Moriyama Robatayaki and consider us for your next dining choice.

We hope this place will become a special sanctuary for you, a place to forget the hustle and bustle of daily life and relax both body and soul. We believe that the vitality of fresh, seasonal ingredients, the meticulous handiwork of our chefs, and our warm hospitality will lead to your smiles. Now, allow us to guide you into the world of our Moriyama Robatayaki.

The Heart of Moriyama Robatayaki: An Unwavering Commitment to Specially Selected Ingredients

What we want to offer with our Moriyama Robatayaki goes beyond simply serving food. It is a special experience of feeling the blessings of Japan's rich nature through food, savoring it with all five senses. At the core of this experience is, above all, our unwavering commitment to ingredients. We hope that in every bite, our customers feel the passion of the producers and the spirit of the artisans who showcase their work.

Every morning, we visit the market, carefully selecting and purchasing only what is in its prime that day. We choose seafood that is exceptionally fresh, having been landed just that day. We select vegetables that are brimming with life, having soaked up the aroma of the earth and the blessings of the sun. Sometimes, we receive freshly picked vegetables directly from our partner farmers. This dedication to sourcing ingredients, sparing no effort, is one of our most important tasks in delivering the ultimate Moriyama Robatayaki to our customers.

Why are we so particular? It's because the robatayaki cooking method cannot hide the quality of the ingredients. The charcoal fire of the robata quickly sears the surface of the ingredients at high heat, locking in the umami. The far-infrared effect results in a fragrant exterior and a plump, juicy interior, but this means the quality of the ingredient itself directly impacts the taste. The true value of robatayaki cannot be realized without fresh, vibrant ingredients. We believe in the inherent power of our ingredients and pour our passion into bringing it out to the fullest.

Pursuing Freshness and Seasonality: Savoring the Bounty of the Sea and Mountains with Moriyama Robatayaki

The cornerstones of our Moriyama Robatayaki are, above all, freshness and seasonality. Japan's four seasons are abundant, offering special ingredients that can only be enjoyed at specific times of the year. We cherish providing our customers with the best flavors of each season.

Fresh from the Sea Each Morning: Savoring Seafood at the Robata

The seafood we source directly from the market each morning is the star of our robatayaki. The fresh catch of the day, which varies depending on the day's haul, lines our robata grill. For example, we select only the best of the season: cherry blossom sea bream and bonito in spring, rock oysters and pike conger in summer, returning bonito and saury in autumn, and yellowtail and crab in winter, when they are fattiest and firmest. The types of fish change daily as we procure the most delicious offerings of the day, making each visit a new discovery.

Seafood grilled slowly over the robata loses excess moisture, concentrating its umami and infusing it with the aroma of charcoal for an exceptional flavor. In particular, our simple yet profound Salt-Grilled Fish is a dish where the quality of the ingredient directly translates to its taste. It is precisely because of its freshness that we can draw out the best flavor with minimal seasoning. We want our guests to experience the powerful, natural umami of the ingredients and this supreme dish, grilled to perfection by our skilled chefs.

Robatayaki-grilled seafood offers a different charm from sashimi or simmered dishes. The unique fragrance born from grilling over charcoal and the delightful contrast between the crispy exterior and the soft, fluffy interior provide an unforgettable culinary experience. We continue to hone our judgment and skills daily to deliver the blessings of the sea to our customers in the best possible condition.

The Bounty of the Earth: Savoring Flavorful Mountain Delights at the Robata

Robatayaki isn't just about seafood. The fresh, just-picked vegetables delivered directly from our partner farmers are also our pride and joy. Centered around vegetables grown in the rich soil of the local Moriyama area, the seasonal produce changes its expression with each season. Their unique sweetness, bitterness, and texture are maximized on the robata grill. For example, Shogoin daikon and turnips that grow sweeter in winter, slightly bitter mountain vegetables in spring, and juicy eggplants and tomatoes in summer—seasonal vegetables are a feast in themselves.

Vegetables grilled slowly over charcoal become fragrant on the outside while their sweetness is concentrated inside, creating a melt-in-your-mouth texture. To let the ingredients' natural flavors shine, we use simple seasonings like salt or soy sauce. Sometimes, we use seasonal miso or a special sauce to draw out even deeper flavors. We have received praise even from customers who aren't fond of vegetables, saying, I can eat these! We carefully grill each vegetable one by one so you can fully enjoy its inherent sweetness and aroma.

The simplicity of vegetable robatayaki is precisely what makes the power of the ingredients stand out. By enjoying seasonal vegetables as they are, you can taste the changing of Japan's seasons on your palate. The fresh sweetness of daikon radish, the savory aroma of shiitake mushrooms, the melting texture of eggplant—we bring out the individuality of each vegetable to its fullest through robatayaki and deliver it to you.

Practical Tips for Enjoying Moriyama Robatayaki

To help you enjoy our Moriyama Robatayaki to the fullest, here are a few practical tips. Knowing these will surely enrich your experience at our restaurant. Whether you are a first-time visitor or a returning guest, please use these as a reference.

How to Order to Savor the Best of Robatayaki

Robatayaki is best enjoyed fresh off the grill. Instead of ordering many items at once, we recommend ordering a few at a time to savor them while they're hot. Our staff is always attentive to your dining pace to serve dishes at the perfect timing. Since seasonal ingredients change, be sure to check the Today's Specials which may not be on the regular menu.

  1. First, choose a few items each from the seasonal recommendations of seafood and vegetables. Starting with the flavors of the season will heighten your anticipation for the meal.
  2. While waiting for the robatayaki to be cooked, prepare your palate with cold dishes or small plates. Small appetizers or fresh sashimi are perfect for this.
  3. As you enjoy the freshly grilled dishes, consider your next order. It's important to eat hot dishes while they're hot, in their best condition.
  4. Conclude your satisfying meal with a rice or soup dish. Enjoy the lingering taste of robatayaki until the end with dishes like ochazuke made with a rich dashi broth or seasonal mixed rice.

We also have limited-time seasonal Moriyama Robatayaki menu items, so please ask our staff for recommendations. We will be happy to introduce you to the most delicious items of the day. Also, feel free to ask for advice on drink pairings. Staff with sommelier qualifications can suggest sake, shochu, or wine that complements your dishes.
