Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

Creating Moments of Joy and Peace of Mind at Our Umedacho Izakaya

Do you ever think, I'd love to dine out today, but I'm worried about my allergies? A meal should be a precious time that nourishes both body and soul. We want all our guests to enjoy this time to the fullest. For those with allergies, we believe it is essential to provide the consideration needed to choose dishes with confidence and savor them. In this column, we will share in detail how our Umedacho izakaya addresses customer allergies and the specific measures we take.

As an izakaya beloved by the local community here in Moriyama, we prioritize food safety and customer satisfaction above all else. Beyond our dishes that feature fresh, seasonal ingredients, we spare no effort behind the scenes to support each customer's delightful experience. Please read about our commitments so you can visit us with complete peace of mind.

Overcoming the Allergy Barrier at Our Umedacho Izakaya

When dining out, allergies can sometimes limit food choices and dampen the enjoyment. Many people feel anxious, dealing with concerns like, There's no allergy information on the menu, I'm not sure if my verbal request was understood correctly, or I'm scared of accidental ingestion.

  • Insufficient allergy information on the menu makes it difficult to make informed choices.
  • Worrying whether the information given to staff was accurately relayed to the kitchen.
  • The constant anxiety of accidentally consuming an allergen.
  • The internal conflict between wanting to eat delicious food and the concern for safety.

With these anxieties, it's impossible to truly enjoy a meal out. This can feel especially challenging at large parties or important business dinners, where individual allergy needs can be difficult to accommodate. We believe it is our mission as an izakaya in Umedacho to sincerely address the challenge of allergies and provide an environment where all customers can dine with peace of mind.

Specific Initiatives to Support Our Customers' Peace of Mind

At our restaurant, we approach allergy accommodation from multiple angles to ensure you can safely enjoy our specialty dishes like Moriyama Robatayaki and Omi Beef.

Carefully Selected Ingredients and Clear Information Disclosure

We work closely with our producers and suppliers to obtain detailed allergen information for all ingredients we use.

  • We thoroughly confirm allergen information from our suppliers.
  • Whenever possible, we consider alternative menu options that avoid specific ingredients.
  • We are prepared to provide specific information about the ingredients used upon customer request.

For example, with our popular Moriyama Omi Beef dishes, we are prepared to answer your questions in detail about which cuts we use and what seasonings are in the marinade. By clearly communicating what's in our food, we help you choose your meal with confidence.

Thorough Management of the Cooking Process and Meticulous Care

In the kitchen, we take meticulous care to prevent allergen cross-contamination. We take special precautions when preparing meals for guests with specific allergies.

  • We physically separate items as much as possible, such as by using dedicated cooking utensils and cutting boards for allergy-friendly preparations.
  • All kitchen staff share knowledge about allergies and strive to prevent cross-contamination.
  • We reconfirm allergy information with every order and begin cooking only after a multi-step verification process.

For our specialty Moriyama Robatayaki, we can adjust cooking methods and sauces based on your prior allergy information, allowing you to enjoy it worry-free.

Attentive Service from Knowledgeable Staff

  1. Experienced staff will directly handle any allergy-related inquiries.
  2. We accurately convey customer information to the kitchen and maintain close communication with the chefs.
  3. We perform a final check on dishes before serving to ensure your safety and peace of mind.

Regarding our Moriyama Sake, some brands may contain allergens from the brewing process. Upon request, we will provide detailed information for each brand so you can make a safe choice.

Detailed Hospitality in a Private Setting

Our establishment also offers Moriyama Zashiki Private Rooms and functions as a Moriyama Fully Private Room Izakaya. Dining in a private space offers significant advantages for allergy management.

  • You can discuss your allergy concerns in detail without worrying about being overheard.
  • The nature of a private room helps reduce the risk of airborne allergens from other guests' dishes.
  • By providing more dedicated service, we can offer more attentive and personalized care.

We especially recommend our private rooms for occasions that require extra peace of mind, such as dining with children or elderly guests. In the calm atmosphere of our Umedacho izakaya, we provide service tailored to each individual guest.

Pre-Visit Checklist for a Safe and Enjoyable Meal

While we take the utmost care, your cooperation helps us ensure an even safer and more comfortable dining experience. Please review the following points before your visit.

  • Please clearly inform us of any allergies when booking or upon arrival.
It is helpful if you can provide details, including the specific ingredients (e.g., eggs, dairy, wheat, shrimp, crab, peanuts) and the severity of your symptoms.
  • Please inquire about the possibility of trace amount cross-contamination.
Due to shared cooking utensils, we may not be able to completely eliminate allergens. If your symptoms are severe, please inform us in advance so we can discuss the options.
  • Feel free to consult with us beforehand about preferred menus or ingredients.
If you have questions about specific dishes, such as the seafood in our Moriyama Robatayaki or the preparation of our Omi Beef, inquiring in advance allows for smoother service.
  • We may not be able to accommodate sudden requests on the day of your visit.
Due to ingredient preparation and kitchen arrangements, last-minute allergy requests can be difficult to handle. We kindly ask for advance notice whenever possible.
  • Please do not hesitate to ask our staff if you have any concerns.
No question is too small, whether it's Is this safe for me to eat? or What are the ingredients in this dish? Please feel free to ask.

The information you provide is a crucial guide for us in preparing your meal. We appreciate your cooperation.
