Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Moriyama.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Moriyama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Moriyama.

05

Private Rooms & Banquets

Fully private tatami rooms for 2–20 guests, banquet courses with free-flow drinks, and full-venue bookings for 30–40. Steps from Moriyama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

When in Doubt, Choose This! A Complete Guide to Our Moriyama Izakaya's Chef's Recommended Courses

Our head chef's recommended courses, created with masterful skill and the finest seasonal ingredients, are a collection of culinary gems that capture the bounty of the season. While we offer several options to meet our customers' diverse needs, today we'll introduce two of our most popular courses.

Taste of Omi's Seasons Course: Savor the Bounty of Shiga with All Five Senses

  • We offer Shiga's prized brand, Omi beef, prepared in various ways. Enjoy it as seared sushi, nigiri, or sometimes as a luxurious steak.
  • We generously use seasonal ingredients, such as fresh fish from Lake Biwa and morning-picked vegetables from our local partner farms.
  • The dishes unfold like a story, from appetizer to dessert, creating a course we can confidently recommend even to first-time visitors.

Robatayaki Indulgence Course: An Exquisite Harmony of Flame and Ingredients

  • This course allows you to enjoy our specialty, Moriyama Robatayaki, to your heart's content. The seafood and vegetables, grilled right before your eyes, are packed with fragrant aroma and concentrated umami, whetting your appetite.
  • Seasonal fresh fish is simply grilled robata-style to bring out its natural flavor to the fullest. The contrast between the flaky meat and crispy skin is an unforgettable experience.
  • Our robata-grilled local vegetables, which change with the seasons, highlight their natural sweetness and freshness. This is sure to satisfy health-conscious diners as well.

For every course, we make no compromises—from selecting ingredients to cooking methods and presentation—to ensure our guests genuinely feel that it is delicious. As an Umeda-cho izakaya, we continually strive to perfect flavors loved by the local community.

From Omi Beef to Robatayaki: The Signature Dishes of Our Courses

Our courses are more than just a sequence of dishes. Each one is filled with the chef's passion and dedication. In particular, Shiga's two great specialties, Omi Beef and Robatayaki, are the pillars of our courses.

A Feast of Melt-in-Your-Mouth Omi Beef

  • Seared Omi Beef Sushi: A blissful piece that melts the moment it enters your mouth, releasing a refined, sweet flavor from its fat. It beautifully starts the course.
  • Charcoal-Grilled Omi Beef: Seasoned simply with salt and pepper, the charcoal aroma enhances the beef's inherent umami. The juices that burst forth with every bite are the epitome of luxury.
  • Simmered Omi Beef and Seasonal Vegetables: A gentle, dashi-based flavor further enhances the umami of the Omi beef. Seasonal vegetables add a splash of color.

The World of Moriyama Robatayaki: Both Bold and Delicate

For our robatayaki, skilled chefs grill carefully selected fresh seafood and vegetables right in front of you. The fragrant smoke from the charcoal and the sizzling sounds of the ingredients create a lively performance that stimulates all the senses.

  • Salt-Grilled Seasonal Fish: The freshest fish of the day, simply grilled with perfect heat control. The skin is crispy, and the meat is tender and flaky. The type of fish varies by season, so please ask our staff for today's recommendation.
  • Robata-Grilled King Prawn: A dish where you can fully enjoy the firm texture and natural sweetness of the prawn. Grilling it in the shell enhances its fragrant aroma.
  • Assorted Seasonal Vegetables: Colorful, local seasonal vegetables simply grilled robata-style to highlight their natural flavors. Enjoy the inherent sweetness and texture of the vegetables.

The harmony woven by these masterpieces will surely become a special experience you can only have at our Moriyama izakaya.

Pairing with Moriyama Sake: The Secret to Enhancing Your Course

Delicious food is incomplete without the right drink. Our courses are designed with pairings in mind, featuring carefully selected Moriyama sake, including local brews from Shiga Prefecture. Experiencing this 'mariage,' where the food and sake enhance each other's charms, will make your meal even richer.

How to Choose Sake to Match Your Dishes

  1. For Appetizers: We recommend a light and crisp Junmai Ginjo or a type with a vibrant ginjo aroma. It stimulates the appetite and builds anticipation for the next dish.
  2. For Omi Beef Dishes: The rich umami of Omi beef pairs well with a full-bodied Junmai or a robust Honjozo. It cleanses the palate of the meat's richness and refreshes your mouth.
  3. For Robata-Grilled Seafood: A light, dry Junmai or a sharp Tokubetsu Junmai is ideal. It enhances the umami of the seafood without overpowering its delicate flavor.
  4. For Robata-Grilled Vegetables: A Junmai with a pronounced rice umami or a slightly fruity Ginjo can be an enjoyable and surprising combination. The sweetness of the vegetables and the acidity of the sake create a wonderful balance.

Of course, in addition to sake, we also have a wide selection of beer, shochu, and wine. Please choose the perfect drink to suit your taste and your meal. If you're unsure, don't hesitate to ask our staff. We will listen to your preferences and suggest the best pairing for you. This will surely liven up the conversation at your Moriyama gathering.
