Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

05

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

Producers

For event organizers, choosing the right venue is a crucial mission that determines the success of the banquet. For those who found this page by searching for 'Moriyama banquet course,' we are excited to share the appeal of our course meals, which are packed with our dedication to quality ingredients.

Whether it's a work banquet, a family celebration, or a long-awaited get-together with friends, we prioritize the 'quality of our food' and our 'spirit of hospitality' to suit any occasion. In particular, our course meals, which make generous use of seasonal ingredients nurtured by Shiga's rich nature, promise to create unforgettable moments for everyone.

In this article, we will detail how our 'Moriyama banquet course' offers a special experience, focusing on our specific commitment to ingredients and our meticulous customer service. We hope you will read to the end and find it helpful in choosing your next banquet venue.

Key Points for Choosing the Perfect Banquet Course in Moriyama

For banquet organizers, choosing a venue is always a challenge. The age range and preferences of the attendees, the budget, the restaurant's atmosphere, and above all, the 'quality of the food' are factors that greatly influence the satisfaction of the event. Food, in particular, is central to the shared experience, and serving delicious, satisfying dishes is directly linked to the overall success of the banquet.

Don't all attendees share the sentiment, 'Since we're all getting together, I want to eat something delicious,' or 'I want to spend a special time with a slightly more luxurious meal than usual'? However, finding a restaurant in Moriyama that meets these expectations is not easy. When it comes to course meals, there are numerous points to check, from the number and content of the dishes to the quality of the ingredients.

At our restaurant, to meet the needs of organizers and the expectations of attendees, we offer dishes made with no compromises, from ingredient selection to cooking and presentation. In the next section, we will delve into the specific reasons why our 'Moriyama banquet course' continues to be chosen by so many customers, focusing on our 'commitment to carefully selected ingredients.'

Why Our 'Moriyama Banquet Course' is the Top Choice: A Commitment to Specially Selected Ingredients

To provide our customers with the best possible experience, our 'Moriyama banquet course' begins with a commitment to selecting each and every ingredient. Centered around ingredients nurtured by Shiga's rich nature, we source the finest seasonal flavors from across the country, which our skilled chefs then prepare with great care. Here, we will introduce our specific commitments in detail.

Savor the Blessings of Shiga with All Five Senses: Local Seasonal Vegetables

  • Shiga Prefecture is a treasure trove of agricultural products nurtured by the bounty of Lake Biwa and its rich soil. We source the most delicious seasonal vegetables of the moment directly from partner farms in Moriyama and nearby areas.
  • Morning-picked fresh vegetables have a deep, authentic flavor and exceptional sweetness and aroma. These vegetables feature in our course meals in various forms, such as colorful appetizers, tempura that highlights the ingredients' natural taste, simmered dishes, and salads.
  • By using seasonal vegetables, you can experience the changing of the seasons through our cuisine. For example, you can enjoy the unique tastes of each season: fresh bamboo shoots and rapeseed flowers in spring, fragrant Kamo eggplant and edamame in summer, chestnuts and mushrooms in autumn, and sweet daikon radish and turnips in winter.

Through close collaboration with our partner farmers, we are able to consistently source the highest quality vegetables. We hope our customers will fully enjoy the bounty of Shiga's land.

The Essence of Seafood at Moriyama Station: Masterpieces Woven from Expertly Selected Fresh Fish

  • To satisfy customers searching for 'Moriyama Station seafood,' we place a special emphasis on fresh seafood delivered directly from fishing ports across the country.
  • Every day, our experienced head chef personally visits the market to select fish in the best condition, based on the day's weather and catch. His discerning eye is not just for freshness but also for the firmness of the flesh and the fat content.
  • For example, we select and procure the most delicious seafood of the season, such as fresh treasures from the rough waves of the Sea of Japan, the rich bounty of the Seto Inland Sea, and the magnificent blessings of the Pacific Ocean.
  • This fresh fish is served in various ways: as a beautiful sashimi platter prepared with delicate knife skills, charcoal-grilled to bring out the maximum flavor, simmered, or fried. A course that generously uses seasonal seafood is a truly blissful moment for lovers of ocean delicacies.

We constantly pursue the highest level of freshness and quality so that our customers can enjoy our seafood dishes with peace of mind.

The Pinnacle of Meat Dishes: Carefully Selected Meats of Uncompromising Quality

  • We incorporate carefully selected, high-quality meats into our course meals, including Omi beef, the pride of Shiga Prefecture. We partner with specialized meat suppliers to source from trusted producers with thorough quality control.
  • Omi beef, known for its fine texture and melt-in-your-mouth quality, adds a touch of luxury to the course in various forms, such as seared sushi, mini-steaks, and shabu-shabu. Sometimes we serve it simply to let you fully savor the meat's natural umami, and other times we finish it with a special sauce for a richer flavor.
  • For chicken and pork, we also select domestic brands raised with care for their environment and feed, and we prepare them in ways that bring out their best flavor. For example, dishes like slowly simmered pork belly and charcoal-grilled local chicken will satisfy even the most discerning meat lovers.

To provide a dish that remains in our customers' memories, we pay meticulous attention to the aging and cooking of the meat, delivering it to your table in its absolute best condition.

The Unsung Heroes: Our Commitment to Rice, Water, and Seasonings

  • While the main dishes are the stars of the course, we are also deeply committed to the 'unsung heroes' that support their flavor: rice, water, and seasonings.
  • For our rice, we select a particularly highly-rated brand from Shiga Prefecture and take special care in how we cook it. Fluffy, perfectly cooked rice enhances the deliciousness of every dish.
  • We also use the delicious local water of Moriyama, which is crucial to the flavor of our cuisine. The quality of the water is especially important when making dashi (broth), allowing us to achieve a mellow, clear taste.
  • Seasonings such as soy sauce, miso, and salt are also carefully selected domestic products. By choosing those made with traditional methods or without additives, we can add a deep flavor without overpowering the natural taste of the ingredients. Even for something as simple as sashimi soy sauce, we select a special one that enhances the umami of the fish.

It is the accumulation of each of these commitments that creates the exceptional flavor of our 'Moriyama banquet course,' a taste you won't find anywhere else.

  • We also have a rich selection of fresh juices and non-alcoholic cocktails for non-drinkers and children, so the whole family can enjoy choosing their drinks without worry.

With delicious food and perfectly paired drinks, your family dinner or gathering with friends is sure to become an even more vibrant and enjoyable occasion.

Practical Steps for Choosing a 'Moriyama Banquet Course' at Our Restaurant

To help you make a smooth and satisfying choice when booking a 'Moriyama banquet course' with us, we have compiled a list of practical steps. Please use this checklist.

  • Decide on the number of guests and budget: First, clarify the number of participants for the banquet and the budget per person. This will help narrow down the types of courses and the size of private rooms available.
  • Consider the desired course content (Japanese, seafood, meat, etc.): We value our 'commitment to ingredients.' It will be smoother if you have a general idea of whether you prefer a Japanese-style course, one centered on fresh 'Moriyama Station seafood,' or one where you can fully enjoy meat dishes like Omi beef.
  • Check for allergies or food preferences: If any attendees have allergies or food dislikes, gather this information in advance. If you let us know when you book, we will do our best to accommodate.
  • Choose the right atmosphere and decide if a private room is needed: Consider whether a private space is necessary or if an open area is better, depending on the purpose of your banquet. Private rooms are ideal for business entertainment or family introductions.
  • Book early to secure your preferred date and seating: We tend to be busy, especially on weekends, holidays, and during the year-end/New Year party season. We recommend booking early to secure your desired date and time.

By following these steps, organizers can proceed with preparations with confidence and select a 'Moriyama banquet course' that will truly satisfy all attendees. If you have any questions, please do not hesitate to contact us at any time.
