Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Moriyama.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Moriyama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Moriyama.

05

Private Rooms & Banquets

Fully private tatami rooms for 2–20 guests, banquet courses with free-flow drinks, and full-venue bookings for 30–40. Steps from Moriyama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the fire from the ground floor counter

The straw grilling happens on the ground floor. From the counter the flames are close at hand, and the crackle of burning straw carries to the table and terrace seats.

02

One slice, the moment it arrives

Take it plain first. The contrast between the smoke-wrapped surface and the moist flesh left inside is the first thing worth noticing.

03

A second pass with condiments, salt and citrus

Change direction halfway through the plate. Rock salt and citrus lighten the finish on straw-grilled Omi beef and on richly fatty bonito alike.

04

Upstairs on the tatami, take your time with sake

Upstairs there are three fully enclosed tatami rooms with walls and doors, each seating seven to ten guests. Out of view, you can linger over Shiga sake from dry to sweet.

A Safe and Enjoyable Banquet with Our Private Bookings in Moriyama

Savor a Special Moment in Moriyama to Your Heart's Content

At our izakaya, located in Umeda-cho, a short walk from Moriyama Station in Moriyama City, Shiga Prefecture, we strive to provide everyone with an unforgettable, special experience. For conversations with loved ones and banquets to share moments of joy, we wholeheartedly recommend a private booking in Moriyama.

As a Moriyama izakaya perfect for various occasions—from company banquets and gatherings with friends to important family anniversaries—we prepare exquisite dishes that showcase the blessings of our region, including fresh seafood from near Moriyama Station, Shiga's prized Omi beef, and carefully selected Moriyama sake.

However, when it comes to large gatherings, one common concern for many is food allergies. We are sincerely committed to accommodating allergies so that everyone can dine with peace of mind and enjoy their time with a smile.

Eliminating the Shadow of Allergy Concerns That Can Cloud Your Private Banquet

When planning a gathering in Moriyama or a Moriyama banquet course, having attendees with allergies can be a major source of stress for the organizer. Worries like Will that ingredient be okay? or It's sad that I can't eat the same food as everyone else can cast a pall over an otherwise enjoyable event.

In particular, when our venue is used as a family-friendly izakaya in Moriyama, allergies in young children often require even more meticulous care than for adults. At typical izakayas, it can be difficult to accommodate individual allergies, or there may not be sufficient information sharing in advance, often leading to anxiety on the day of the event.

You choose a special space like a private booking in Moriyama because you want to cherish your private time and have fun without worrying about others. However, as long as allergy concerns remain, it's impossible to truly feel that booking privately was the right choice. We are determined to address this challenge with thorough measures for the sake of each and every customer's smile.

Our Concrete Measures to Ensure Peace of Mind: For Everyone's Smile

At our Moriyama izakaya, we implement the following concrete solutions to ensure that our guests can enjoy their meals to the fullest without worrying about allergies. We can provide even more detailed support, especially for those using our private booking service in Moriyama or our izakaya with completely private rooms in Moriyama.

Thorough Pre-Visit Consultations and Individualized Support

  • Detailed Information Gathering at the Time of Reservation
When you make a reservation, if anyone in your party has allergies, we will ask for detailed information about the nature and severity of the allergy (from mild intolerance to severe allergic reactions). We carefully confirm and record the person's name, the type of allergy, and specific symptoms, much like a medical chart.

  • Information Sharing and Confirmation by Staff
The information we receive is reliably shared with the head chef and the service staff on duty. To prevent any omissions, we thoroughly confirm the details not only at the time of booking but also verbally the day before and on the day of your visit.

  • Ingredient Checks and Alternative Suggestions
If a course meal or à la carte dish contains a potential allergen, we will identify the ingredient and propose alternatives or different preparation methods. We carefully check every detail, including main ingredients like seafood from near Moriyama Station and Omi beef, to ensure you can dine with confidence.

Dedicated Staff for Preparation and Management

  • Thorough Sanitation Before Cooking
Before preparing an allergy-friendly dish, we thoroughly clean and sanitize cooking utensils and preparation areas to prevent allergen contamination. We pay meticulous attention to all equipment used, including cutting boards, knives, and countertops.

  • Assignment of Knowledgeable Chefs
The preparation of allergy-friendly meals is handled by chefs with specialized knowledge and experience. They are well-versed in the characteristics of allergenic ingredients and strictly adhere to procedures to prevent cross-contamination with other dishes. For example, when preparing our Moriyama robatayaki, we take measures such as grilling allergenic seafood separately from other meats.

  • Meticulous Final Checks
Once a dish is prepared, multiple staff members re-check the contents to ensure there are no mistakes before it is served. We take extra care to prevent mix-ups when serving individual guests, especially during a Moriyama banquet course with many dishes.

Flexible Menu Proposals and Alternative Ingredients

  • Customizing Course Menus for Guests
For instance, if a guest has an allergy to a specific ingredient in a course meal for a gathering in Moriyama, we will remove that ingredient and reconstruct the menu with other seasonal ingredients or substitutes to provide an equally satisfying experience. We will propose a menu tailored to each guest's needs, one dish at a time.

  • Consideration for Sake Pairings
For guests who wish to enjoy pairings of our Moriyama sake and cuisine, we can also select allergy-conscious sakes or suggest non-alcoholic drinks. Please do not hesitate to consult with us about beverages as well as food.

  • Alternatives Featuring the Best of Shiga
We want our guests with allergies to also enjoy Shiga's delicious local specialties, such as Omi beef and seafood from near Moriyama Station. For example, for a guest with a shellfish allergy, we can offer the rich flavors of fresh local fish sashimi or a dish abundant with Shiga-grown vegetables.

A Space That Maximizes the Benefits of a Private Booking in Moriyama

  • Peace of Mind in a Private Space
By using our private booking service in Moriyama, a private zashiki room in Moriyama, or our izakaya with completely private rooms in Moriyama, you can reduce the risk of allergen contamination from other customers' dishes. It also creates an environment where you can comfortably communicate your allergy-related needs to our staff.

  • Near-Exclusive Service
For our private booking guests, our service staff will attend to you almost exclusively, allowing us to respond promptly and courteously to any allergy-related questions or sudden requests. We provide meticulous attention while observing each guest's needs.

  • Worry-Free for Families with Children
When using our venue as a family-friendly izakaya in Moriyama, a private room allows children to eat their allergy-friendly meals in a relaxed atmosphere without worrying about others. We pay special attention during service to ensure there are no mix-ups between allergy-friendly and regular meals.

Practical Steps for a Worry-Free Private Banquet

To help you make the most of our services and enjoy a fun, worry-free private banquet in Moriyama, here are the specific steps we ask our customers to follow.

  1. Please always inform us about any allergies when making your reservation.
When booking by phone or online, please mention first that someone in your party has allergies. The more details you can provide—such as the type of allergy (e.g., specific allergens), the exact ingredients, and the severity of symptoms—the better we can prepare.

  2. Tell us specifically who has the allergy and what it entails.
Please inform us of the guest's name and the specific allergens, such as, Ms. Suzuki is allergic to eggs and dairy. Vague descriptions can be difficult to work with, so precise information like, Fish roe is fine, but crustaceans are not, is extremely helpful.

  3. Please don't hesitate to consult with us about any questions or requests.
If you have any concerns about the menu or requests like, We'd like you to use this ingredient, please feel free to ask. If possible, multiple consultations before your visit can help us create the perfect banquet plan.

  4. Please confirm the details with us verbally again on the day of your visit.
When we guide you to your table and before we begin serving your meal, our staff will reconfirm the allergy details with you. We appreciate your cooperation in reviewing the information at this time so you can begin your meal with complete peace of mind.

These steps are crucial for ensuring every guest can enjoy their time at our Moriyama izakaya with confidence. We appreciate your cooperation.
